Crock Pot Chicken Cordon Bleu

Hey everyone.  This week’s recipe didn’t really photograph well, but I promise you, it is tasty!  I originally got this recipe from another blogger.  I believe it was a Friday Favorites link up.  I had the link saved on my computer, but the lightning killed it a couple of weeks ago, so all my favorite links are gone! So if you posted a recipe similar to this, let me know, and I’ll credit you!
Anyway, the original recipe actually had honey mustard in it, but I used ranch here because we had some on hand.  I also used Swiss AND American cheese.  And the reason the ham looks funny is because I used some leftover ham pieces that I had frozen from Christmas!  Talk about delicious!  But I’m sure deli slices would great with this as well!
(Psst….come back later this week for a Publix Giveaway!)

Recipe for Crock Pot Chicken Cordon Bleu

Ingredients:
4 boneless, skinless chicken breasts
4 slices American Cheese
8 slices Swiss cheese
2-4 slices of ham per piece of chicken (depending on what kind of ham you’re using and how much you want)
1/2 cup water
1 1/2 cups ranch dressing
cooking spray
Directions: Spray crockpot with cooking spray.  Add water and about half of the ranch dressing.  Add chicken.  Place about half of the cheese slices on top of the chicken.  Top with remaining dressing.  Cover and cook. (Cook times will vary. Mine will cook chicken breasts in about 1 to 1 1/2 hours, but if you have an older one, it may be longer.)  About 30 minutes before cooking is complete, add your ham, and top the chicken with remaining cheese slices. Serve and enjoy!

Here’s the chicken before the ham was added:

Italian Porkchops

“Pork: The Other White Meat.”  Actually I just read that the pork people are changing their slogan to “Pork: Be Inspired.” ….Interesting! And it’s certainly new and different!
However you say it, I always love a good porkchop!  And we love them grilled or baked, but I find they are usually most tender when I cook them on the stove top.  And I like to try a lot of different recipes and seasonings on them, but today I’m sharing one of our favorites.  Hope you enjoy!
Recipe for Italian Pork Chops:
Ingredients
4-6 boneless porkchops
3/4 to 1 cup Italian Dressing
Lemon Pepper, to season
cooking spray
Directions: For a fast, last minute meal, spray a large frying pan with non stick cooking spray.  Then pour Italian dressing in to a bowl.  Dip porkchop in the dressing, then flip over and dip the other side. Place in pan. Repeat until all chops are dipped. Season with lemon pepper. Cook on medium heat until porkchops are cooked all the way through.
If you have more time before dinner, place porkchops and dressing in  a bowl. Make sure each chop is coated well.  Cover and refrigerate for a couple of hours before cooking.

Freschetta Simply Inspired Pizza Review and Giveaway

This is a Sponsored post written by me on behalf of FRESCHETTA®. All opinions are 100% mine.

This week we have a yummy food review with a giveaway brought to you by Freschetta!  As someone who loves pizza I was so excited when I got picked for this campaign.
I’m sure you’re familiar with Freschetta pizza. Even if you’ve never tried it you are bound to have seen the commercials. Right?  But what you may not know is that there is a new line of FRESCHETTA® Simply…Inspired™ Pizzas .
Simply…Inspired Pizzas feature larger cuts of fresh-tasting vegetables, a thin, light crispy crust, flavorful, real cheeses and signature sauces, creating deliciously different pizzas from toppings to bottom.  They are also packaged using Freschetta’s new Fresch-Taste Seal package, which locks in the vibrant flavors, while using 30% less packaging material.
The Simply…Inspired line features eight great-tasting varieties!  Check out their website to see which one is simply…you!
For my review I chose the Southern BBQ Recipe Chicken.  I was impressed by the new Fresch-Taste Seal package.  I could tell that it does a good job of locking in the flavors because the moment I opened the pizza I could actually smell the ingredients!
And it cooked up deliciously!  I’m a little picky when it comes to frozen pizza but I totally loved this one.  First off the ingredients tasted very fresh and much better than other frozen pizzas I’ve tried.
And we loved the combination of flavors and spices in the barbeque sauce and on the pizza as a whole.  I also loved the taste of the cheese on this pizza. It was a very flavorful mix of mozzarella and gouda.
And perhaps my favorite part of the pizza was the chicken.  The chicken was fajita-flavored, and it was very tender, juicy, and full of flavor. It actually tasted like something that was just freshly cooked at a restaurant!
My husband and I would definitely give this pizza two thumbs up, and we’d definitely eat it again!

Super Fast Buffalo Chicken Sandwich

I’m always looking for quick and easy things that I can make for lunch, and one of my husband’s favorite things to eat at any fast food place is chicken sandwiches, so we eat a lot of those.  We used to go to Checkers for lunch a lot because they were only about two minutes from our house, and they have a lot of good sandwiches there.  One of my favorites is their buffalo chicken sandwich.  It’s one of the best buffalo chicken sandwiches I’ve had (even in comparison to sit down restaurants), and it’s only $1, so that’s a super value to me.
But you my have noticed that I said, we “used to” got to Checkers, and they “were” two minutes from our house.  I use the past tense because for some reason they closed the location last year.  I’m not sure why.  It looked like they had a steady business; they were also in a good location, and the food was always good there.  But alas, for whatever reason, they closed, so I can no longer order my precious buffalo sandwich, unless we want to drive out of town for about 30 minutes.  And as a result, my poor husband has to endure my whining about Checkers (of all things) whenever we drive by the old location.
If you were wondering why I’m telling you about this strange obsession with Checkers, it’s because their buffalo chicken sandwich was the inspiration for the buffalo chicken sandwich that I’m sharing with you this week.

Recipe for Super Fast Buffalo Chicken Sandwiches

Ingredients:
Frozen Chicken Patties
Ranch or Bleu Cheese Dressing
Buns
Lettuce (optional)

Directions:
Cook chicken patties as directed.  (The ones I used can be cooked in the microwave for about a minute per patty).  Pour buffalo sauce into a bowl. (I used Franks)  Dip the patties into the sauce on top and bottom.  Place on bun.  Top the chicken patty with salad dressing and then top with lettuce if desired.  Serve with chips or fries.
Tips:  I bought the chicken patties pictured here at Aldi.  They come in box of 4 for just $1.99.  A great deal!  Aldi also has some Southern Style Chicken patties.  I can’t remember the cost of these, but they are really good too, and they actually remind me a lot of the Southern Style sandwich at McDonalds.

So since I seem to be in the mood to talk about fast food today, I feel that I should ask everyone a question: What is your favorite fast food place?  And what do you like to order when you go there? I’d love for you to share your answers in the comments!

Bean Soup

Come join Soup-a-Palooza with Tidy Mom and Dine and Dish sponsored by Bush Beans, Hip HostessPillsbury, and Westminster Crackers.

For this event, I’m sharing my bean soup.  This is comfort food at its best, simply perfect for this time of year, and it’s extremely easy to make with only few ingredients.

Recipe for 15 Bean Soup

Ingredients:
1lb smoked sausage (or ham hocks)
1 bag 15 Bean Soup (I use Hurst’s brand)
Salt and pepper
water
Directions:
Before cooking, dump out beans on to a plate and sort, removing any stones and debri.  Pour into a strainer and rinse.

Traditional /Cooking Method Directions:
Soaking: Place beans in a large pot, cover with 2 quarts of water. Allow beans to soak overnight or at least 8 hours. After soaking, drain water, add 2 quarts of water and meat. Bring beans to boil, reduce heat and simmer uncovered for 2 1/2 hours to 3 hours. Add contents of ham packet (from your bean soup bag) and add salt and pepper to taste about 30 minutes before cooking is complete.
Quickcook Method Directions:
Place rinsed beans in a pot with 3 quarts of water.  Bring to a rapid boil. Reduce heat, cover and continue boiling 1 1/2 to 2 hours. Stir occasionally to prevent sticking. About 30 minutes before cooking is completed add ham packet and salt and pepper to season.

Tips/Suggestions:

To spice this recipe up, the Hurst’s package recommends you add 1 cup of chopped onion, one 15 oz. can of diced or stewed tomatoes, 1 tsp chili powder, juice of one lemon, and a clove of minced garlic about 30 minutes before cooking is complete.  Growing up, we never had all that stuff in our bean soup, but I’m sure it’s quite tasty and flavorful.

And if you don’t have time to stand over the stove stirring and watching the soup cook, try making this in the crock pot.  Just cook for the same length of time as it takes for other beans.

Chicken Spaghetti

Today I’m sharing my *new favorite* recipe! My friend Cindy at Hun…What’s For Dinner shared this Chicken Spaghetti on her blog several weeks back.  She originally saw it over at The Pioneer Woman and decided to make a few changes to it.  I then looked over both recipes and made further changes. lol.
I have to tell you, I see so many recipes from week to week.  Many of them get bookmark and some of them eventually get made, but once in while, I see something that looks just good enough (and easy enough) for me to make it the same week.  This was one of those times, and it definitely did not disappoint. I’ve already made it twice since I found the recipe, and I know I’ll be making it a lot more in the future! Enjoy!

Recipe for Chicken Spaghetti
Ingredients:
2 cups chicken, cooked
3 cups dry spaghetti (broken)
1 can cream of chicken soup
1 can cream of mushroom soup
2 cups shredded cheddar cheese
2 cups chicken broth
1/4 cup onion, chopped
1/4 cup green onion, chopped (I didn’t have this so I used chopped carrot)
1 teaspoon Lawry’s Seasoning Salt (I think regular salt would work just as well too)
1/2 teaspoon pepper
1 cup shredded cheddar cheese (for topping)
Directions:
Cook chicken on stove top.  (I used 3 boneless, skinless chicken breasts, but the original recipe calls for a whole fryer chicken.) Remove chicken and cook spaghetti in the same water.  Shred your chicken into tiny pieces and place in large bowl.  Add soups, veggies, cheese, and broth.  Drain the water off your cooked spaghetti, and add noodles to the bowl.  Add seasonings and mix.  Pour into a 9×13 glass baking dish.  Pour an additional cup of cheese over the top.  Cover with foil and bake at 350 degrees for 30 minutes.

SSH’s Best of 2010: Food

Hi everyone!  Hope you’re enjoying the new year so far!  I think it’s no secret to anyone that food is my favorite thing to post about here at Simply Sweet Home, and I’m so excited every week to get your comments on my recipes. For this week, instead of posting a new recipe, I am revisiting some of my favorite foods that I shared with you on my blog in 2010.  Hopefully you’ll enjoy them just as much the second time around and maybe even catch something that you might have missed the first time!
Happy Baking in 2011!

Taco Soup

I just love stews, soups, and chilis this time of year! This year, up until now it’s still been too warm around our house for hot comfort foods.  But today I actually turned the heat on, so now I’m starting to see some soup in our near future! In the last couple of years I’ve been turned on to Taco Soup.  If you like chili, you’ll love this!  It’s not too spicy, not too bland, full of flavor, and perfect for a cool fall day.

Perdue Chicken Review and Giveaway

I’m always looking for quick menu options for lunch and dinner.  Often frozen chicken products are a go-to food for this.  We usually buy buffalo flavored chicken tenders or boneless wings.  But sometimes we get the plain chicken tenders or chicken patties for sandwiches as well.  So I was really excited when I got an email from Shespeaks that allowed me to enroll in a program to try Chicken Nuggets from Perdue.

For those of you not familiar with Perdue, you can find their products in stores from Maine to Florida, and as far west as St. Louis.  The company sells a variety of chicken products, from fresh chicken, to precooked refrigerated chicken, to frozen chicken.  And you can find their nuggets and strips in the freezer section along side your favorite frozen entrees and appetizers.
I was very excited to see the variety of Perdue products available, including nuggets in fun Dinosaur shapes, Buffalo strips, and even whole grain chicken strips.  Clearly they have something for everyone in this product line!
When shopping for frozen chicken products, I look for something that I can cook up fairly quickly.  And I want something that’s going to taste just as good as something I could make from stratch or get at a local restaurant (without the work or added cost).  Perdue definitely satifies these qualities.  And I was happy to find that the chicken was of a great quality and taste.

And as I looked at my package of Chicken Breast Tenders, I noticed that 3 tenders were only 15 grams of carb (or 1 carb serving for those of you familiar with the term).  Since my husband’s a diabetic, I love it when I find foods that I can easily measure out the carb servings for.  (Even though hubby often surpasses his limit, I at least try to make an attempt to count the carbs, and this is very helpful for me.)
Overall, I find Perdue to be a great choice for those of you with kids who love chicken nuggets or for those of you without kids that love the occasional quick meal or appetizer of chicken tenders.
Win it!  One Simply Sweet Home reader will win a prize pack which includes the following:
-A coupon for a free sample package of Perdue’s Frozen Breaded Chicken Nuggets (up to $7.99 value)
-A handy silicone-baking tray (easy to use and easy to clean!)
-Ten coupons for $2.00 off frozen Perdue products
Giveaway Closed. Congrats to our winner Charlotte!
