Parade of Wedding Cakes

Wedding & Shower Cupcakes

I love the idea of a Rocky Mountain Wedding.  It’s a perfect mix of romance with a cozy, country, rustic appeal. A few weeks ago someone asked me if I had any ideas for some wedding cupcakes. This got me to searching online, where I found a lot of lovely ideas. Today I’m sharing some of the beautiful wedding and shower cupcakes that I found. I absolutely love these; you can tell that a lot of creativity goes into each one, and I love seeing all the different colors and variety of designs.

As always, I’ve included links to the sites or flickr account where these came from, and I totally recommend all these sites. In fact, as I was sending out messages in order to get permission to use the photos, it was really hard choosing just one cupcake from each artist. Hope you all enjoy!

Inspired Shower Tables

Since yesterday’s post focused on the Happy Couple Collage as a gift idea and decor idea, today we are looking at more bridal shower decor.

Photos, banners, flower arrangements and centerpieces, balloons, and streamers are all nice, but the main thing that people pay attention to at any bridal shower is the serving table. Rather than listing a bunch of ideas for your shower table decor, I thought it would be better to show you some examples.

I just love seeing how different people decorate for their parties, and it’s a great way to get ideas. For this post, I tried to find a variety of tables for you, from the very simple to the ornate. And I think whatever you’re taste is, you should find something that inspires you here.

This collection of photos was gathered on flickr, and each person gave me permission to use their photo. If you have any questions or comments on the individual tables, you can contact the owner by using the link below the photo. (Sorry that the photos are a little smaller than the ones normally found here. I had trouble with a couple of the pictures, and I decided to make them all uniform, and it’s better to shrink some down than to make small photos bigger.)

Happy Couple Collage Project

Here’s a lovely gift and decor idea for any shower or wedding. Sorry I don’t have any photo examples to show, but I’m sure you can imagine it in your mind’s eye. This is just an idea I came up with last week; I’ve never actually seen one of these before or heard of it, but I know I would love to have one of these made, and I’m sure others would as well.

Often at weddings and showers, photos of the happy couple are displayed on a table, serving as a decoration and as a way of telling the couple’s story. The idea of the Happy Couple Collage takes this concept to another level. Not only will it make a great decoration for a shower, engagement party, or wedding, but it will also make a lovely gift and keepsake.

The collage can be as big or small, and as simple or elaborate as you’d like for it to be, and using any materials you deem appropriate. The collage essentially tells a story about the happy couple. To complete it, you may need to borrow some materials from the couple (such as pictures or memorabilia). But in some cases you may be able to put the project together by getting materials from other friends and family members of the couple, and you may even be able to use some outside sources.

If you can gather the materials and keep it a surprise, Great! But if you have to ask the Bride-to-Be for a few items, this is okay. After all, she won’t know what you’re using the items for, and if you borrow them long enough in advance, she might even forget that you have them. But if you really want to keep it a secret, there are a lot of strategies you could use to get the items you need. Since the gift is largely for the bride, you could use the groom to “sneak” a scrapbook away from the bride-to-be, and friends or family members should be more than willing to help too.

Here is a list of items you may want to include on your collage:

-Baby/childhood pictures of the the bride and groom.
-A current picture of the couple.
-A picture of the place where the couple first met.
-A picture, menu, or business card from the place where the couple had their first date.
-A picture or a brochure from the couple’s first vacation destination.
-A photo of where the couple will live.
-A photo of the location where the proposal took place.
-A brochure or picture from the couple’s future honeymoon destination.
-If the couple went to school together, you could put a copy of the school’s seal.
-If the couple work together or met at a place of business, you could put a copy of the logo of their place of business.
-Copies of tickets from concerts, sporting events, movies, and other attractions the couple has attended.
-A picture of the couple with family members, kids, or pets.
-A picture of the couple participating in a favorite hobby or activity together.
-Scrapbook embellishments that represent a hobby, activity, or something else that’s meaningful to the couple.
-Lyrics from the couple’s favorite song.
-A picture of the person who introduced the couple, if applicable.
-A picture of the couple from their first Christmas together.
-Pictures and mementos from other milestones the couple has experienced together.
-Menu/Business Card/Photo of the couple’s favorite restaurant or hang out (or a picture of the couple at this place).
-If you need fillers, you can use little flower embellishments, gems, stickers, a bride & groom scrap booking embellishments kit, and other items to cover the empty spaces.

Place all your items on the material of your choice from scrapbook paper, to poster board, or a canvas. Or you could even use cork board or foam. Have the project framed, and you’re good to go! (Hint: On the back of the frame, you should sign your name and/or write your own personalized message to the happy couple.)

So what do you guys think of the Happy Couple Collage idea? And has anyone ever seen one of these?

Chicken Pockets

A couple of weeks ago I got to experiments and made some chicken pockets. These are very easy and quick to make, and they are very versatile and inexpensive. They makes a great snack or lunch time food for kids. And it would also be a great appetizer to serve at parties, or even a wedding or shower!

Along with the recipe, below you’ll find some photos I took of the process, and below that you’ll find my usual tips and suggestions for the recipe. I have a lot of great ideas for variations on this one. I’d love to hear your ideas for this as well!

Recipe for Chicken Pockets:
1 can crescent rolls
1 can chicken breast, drained
2-3 spoon fulls mayo (depends on how much mayo you like)

Directions: Pull crescents apart. There should be 8 triangles. Put two of the rolls together so that it makes a rectangle shape. Use your fingers to press the two rolls together. Repeat with the rest of the rolls. Mix up your mayo and chicken. Spoon out some of the chicken mixture onto the roll. (see pic below) Then roll the dough up into a pocket. Press the dough again with your fingers to make sure the pocket is sealed. Bake according to the instructions on the crescent roll package.

Notes: After placing the chicken mixture on the dough, I had a little bit of chicken mixture left. You may want to use all the chicken in your pockets, but if not then the chicken mixture is great by itself or on a salad or regular sandwich bread.

The rolls look kind of funny because I used off brand crescent rolls which taste great, but they don’t always break away perfectly!

At least they looked better after baking!

Tips and Suggestions:
-To make these a little more flavorful or “grown up” if you will, you could try adding any of the following, a spoonful of poppy seeds, celery seed, or dill seed.
-Shredded cheese would add a lot to this as well. (Wish I had thought about it at the time, in fact!)
-You could also add a spoonful of pickle relish. (I love dill!) Or add a piece of chopped celery (yum!), or add a little chopped onion. And I think bacon bit would be delicious in this as well.
-And some people like to put chopped pecans in their chicken salad mixtures, as well as grapes or craisons. Personally it’s not my cook of tea, but I know a lot of people would like this.
-Also, if you don’t like mayonnaise, you use miracle whip, cream cheese, or a salad dressing of your choice. (I think ranch would be yummy!) And you could always use barbecue sauce or even buffalo sauce!
Serving note/idea – The great thing about these is that if you have any leftover, they’re great to reheat later. I personally ate 2 of these, and it was enough to fill me up for lunch. If you have small children, instead of doing the pockets with two crescents, I’d recommend doing single crescents, and roll them up like usual with the chicken mixture inside, to make a total of 8 roll-ups. This may also be a better option if you want to make these as a party food.

Recipe of the Week: Black Bean Spirals

With the Super Bowl coming up here soon, I thought it would be a good time to post an appetizer. Last year one of the appetizers I made was Black Bean Spirals. Actually I did the recipe for the filling, and I used about half of it for the spirals, and I used the other half of the filling as a dip for nacho chips. You could also skip the step of cutting them into spirals and have black bean wraps (adding toppings if you so desire).

I really like these. I can’t really think of a good way to describe them other than to say that they’re just different. There very light compared to a lot of appetizers out there, which also makes them a great snack for summer time parties. And this is another great recipe that you can use as a base and then add other ingredients or serve it in a variety of ways.

Here’s the recipe:

Ingredients:
4 ounces of Cream Cheese, softened
1/2 cup of cheddar cheese
1/4 cup of sour cream
dash of salt (optional)
1 cup canned black beans, rinsed & drained.
3 flour tortillas

Directions:
-Mix cheeses, sour cream, and salt until well blended.
-Place beans in food processor and process till smooth. Add beans to the mixture and spread on tortillas.
-Roll up tortillas and chill for 30 minutes. Cut into 1/2 inch slices and serve.
-Optional: Garnish with pico de gallo or a little salsa, or serve salsa on the side for dipping.

I took these photos as I went through the process of making them:

This is the filling mixture…again, I LOVE this as a dip!

Spooned out on a tortilla.

Wrapped up.

The final product: Black Bean Spirals

Tips & Suggestions:

-Try adding shredded chicken to the filling mix….everything’s better with chicken!
-The filling mix would be a great topping for tacos, taco salad, and other Mexican dishes.

-It could also be used for filling in finger sandwiches, pitas, and other bread items.

My Easy Creamy Salsa Dip

The holiday season gets a little crazy, with all the extra social events, cooking, baking, shopping, card sending, gift wrapping, decorating, and countless other activities. In times like these it’s always good to find short cuts and simple solutions. So to go along with this week’s simplicity theme, I decided to post my recipe for Creamy Salsa Dip. This was actually the first recipe that I ever posted on the blog, but at the time I didn’t have a photo of it. So when I made the dip last week, I decided to get some photos to share.

I’m also posting this on the appetizer portion of the Bloggy Progressive Dinner. The appetizers are being hosted by A Simple Walk on Tuesday.

Recipe for Creamy Salsa Dip:
Ingredients:
8 oz. Cream cheese (softened)
1/2 cup Sour Cream
1 1/2 cups salsa
Directions: Cream together the cream cheese & sour cream. Add salsa gradually and mix well.

Tips & Suggestions:
-Serve with tortilla chips, Fritos, or potato chips.

-It would also be great with crackers, vegetables, crescent rolls, or even other appetizers like chicken fingers or Southwestern eggrolls.

-Here’s something my husband & I came up with: Chop up one or two cooked chicken breasts, and add to mixture. Use for dipping or bake inside of crescents or tortillas.

-This recipe is great for a big party or a quiet night at home.
