Lunches: soup, sandwiches (not sure what kind, I still have to go to the store tomorrow)

Dinners:

Monday – Roast beef (left from last week) w/ mashed potatoes, black eyed peas & biscuits
Tuesday – One Dish Chicken & Rice Bake
Wednesday- Tacos (didn’t make last week)
Thursday – Red Beans & Rice, corn, and cornbread
Friday – Leftovers
Saturday – Brunswick Stew
Sunday – Mexican Chicken Casserole

Menu Plan Monday for December 29


This past week has gone by so fast. On Christmas day (Thursday) I felt like it was a Wednesday, and on Friday, it felt like a Thursday to me, and so on and so on…

Luckily due to the holidays and everything, I didn’t get a chance to make some of the things I had planned on last week, so they’re getting moved to this week. (which makes for some easy meal planning.)

I did get the chance to make one of my new recipes last week. I made the bacon cheeseburger skillet, which turned out very well. I’ll try to post the recipe and picture later on in the week. Till then, here is this week’s menu. Happy Monday!

Breakfast – cereal, pancakes, eggs/grits/bacon

Lunches – sandwiches, beef stew (from the freezer), leftovers from dinner

Dinners
Monday – Roast beef & gravy, mashed potatoes, green beans
Tuesday – Chicken Tetrazzini (didn’t get to make last week)
Wednesday – appetizer night: finger sandwiches, buffalo chicken bites, chips & dip, nuts, and leftover christmas candy
Thursday – ham, black eyed peas, cornbread, and boiled cabbage or salad
Friday – Leftovers
Saturday – Chicken Tortilla Soup *new recipe*
Sunday – not sure yet

Menu Plan Monday for November 24


I’ve got a busy (but hopefully good) week coming up. My husband’s off work for the entire week, but unfortunately we’ve got a lot of business and errands to tend to. No rest for the weary! And then of course there’s Thanksgiving, followed by a weekend of taking down fall decorations and putting up Christmas stuff, and a whole host of football games to watch.

Also, this week I am kicking off the Simply Sweet Home Christmas Festival! For the next month, I’ll be featuring a ton of ideas for Christmas, including decorating, crafts, gift wrap organizing, gift ideas, and of course, plenty of Simply Sweet Home recipes! Menu Plan Monday for November 10

It’s been kind of a long day around here, so I’ll be brief. Due to changes in plans, I’ve moved one of my meals from last week to this week, so if you notice a repeat that is the reason for it. My husband also put in a special request for poulet. This recipe has become an instant favorite of ours. We’ve totally fallen in love with it, and I think it’s going to be *regular* recipe in our house, so as long as I do MPM posts you are sure to see it again. Hope you all have an excellent week!

Menu Plan Monday for November 3

It’s hard to believe it’s November already. The months and years just keep going by faster and faster. It doesn’t even seem possible that Thanksgiving is only 3 1/2 weeks away, which means Christmas is just around the corner. Whew! If only we could just stop time for a little while so that I could catch up!

Well, I hope you all had a fun Halloween. Ours was pretty uneventful (in a good way). We only had around 20 trick or treaters. I wish we could have seen more kids in costume. But at least we have a steady supply of candy bars leftover. (Disposing of them will be a tough job, but I’m sure we can handle it.)

But unfortunately we can’t just sit around eating candy and junk all the time. so without further ado, here is this week’s menu:

Breakfasts – oatmeal, cereal, biscuits & gravy

Lunches – ham/turkey sandwiches, tuna sandwiches, dinner leftovers

Dinners
Monday – Lasagna
Tuesday – Beef stew
Wednesday – Beef stew

MPM again. Our computers were down for a few days this past week, preventing me from doing any posting until Friday. And even though we’re back online, the connection is a little slow. If it doesn’t get any better in the next day or so, I’ll be asking my husband to “call the man” (to quote Andy Griffith). But I have to admit, a “slow” high speed connection is better than no connection at all. But hopefully we can get it all figured out, and this week will be a lot better!

Lunch – ham sandwiches, turkey sandwiches, dinner leftovers

Dinners:
Monday – Beef ribs, macaroni & cheese, deviled eggs

Breakfasts: cereals, oatmeal, ham & cheese scramble

Lunches: ham & cheese sandwiches, leftovers from dinner

Dinners:
Monday – Chicken Poulet served with beans/vegetables (this recipe feeds us for 3 meals)
Tuesday – leftover poulet
Wednesday – Cheeseburger Macaroni
Thursday – leftover poulet again
Friday – Easy Chicken Pot Pie (recipe below)
Saturday – Eating out
Sunday – Pork chop sandwiches w/ fries

Recipe for Easy Chicken Pot Pie
3-4 chicken breasts, (boneless, boiled and shredded) (or use 2 cans boneless chicken)
1 can Veg All, drained
1 can cream of chicken soup
1 c. chicken broth from chicken
1 c. milk
1 c. Bisquick mix
Spray casserole dish with non-stick cooking spray. Mix chicken, broth, veg-all, and soup together and pour into dish. Mix Bisquick with milk and pour over mixture. Bake at 450 degrees for 25 minutes.

Menu Plan Monday for October 13


This week is going to be a little different for me. My husband is starting a new job, where he’ll be working nights, which means a lot of change and adjustments in our schedule & life, mostly for him, but also for me, since I’ve grown quite accustomed to having him home with me every night, but also because it’s going to change the menu planning a little. I know it’ll take me a week or two to get used to the schedule and figure out exactly how I’ll do things, and hopefully when I start a new job it’ll all come together nicely.

To help myself get a little better organized, I’m going to try and start planning out my breakfasts & lunches too. Before, it was hard to do that because my husband had classes at different times of the day, and his work schedule varied from week to week. It’s rather difficult to plan what you’re having for lunch when you don’t even know if you have anyone to make lunch for, but now that he’s working regular hours, I should be able to do more planning & scheduling for all of our meals.

Lunches – Chicken Salad sandwiches, Egg Sandwiches, leftovers from dinner

Monday – Burgers & Fries
