Menu Plan Monday for March 10

Hey all. I hope you’re all enjoying the Easter and St. Patrick’s Day posts, and for all you blog partiers out there, I hope you’re having a good time.

Well, the weeks sure do go by fast. It’s time once again for Menu Plan Monday. And rather than making a big trip to the grocery store for extra stuff, this week I decided to basically do a de-cluttering of my food supply. I always do an inventory of the kitchen when making a menu just so I’ll know what items I already have, but sometimes I’ll put something on the list even if I don’t need it, just because I like to stay stocked up. (for example, I’m always buying cream of mushroom soup because it goes in so many dishes.)

Well, this week I’m skipping the shopping trip all together, and I’m making dishes that I already have supplies for. This will save me time & money at the grocery store this week, and it will totally clean out my pantry so I can have a kitchen full of fresh ingredients after my next shopping trip. Well, here’s the menu I came up with:

Monday – Mexican Chicken Casserole
Tuesday – Chicken Noodle Casserole w/ black eyed peas, corn, & biscuits
Wednesday – Sloppy Joes w/ potato salad and macaroni & cheese
Thursday – Cream of Chicken & Vegetable Soup (either with biscuits or sandwiches)
Friday – Leftovers
Saturday – Eat out or fix whatever is left in the kitchen
Sunday – Appetizers & Snacks

Hello all. Hope you all had a good weekend. If you haven’t done so already, check out last week’s recipe of the week for Chicken Florentine Casserole . It’s a great one! Now on to this week’s menu. I have a couple of new things to try, along with some “old faithfuls.”

Monday – Cheesy Chicken & Pasta (this is one of those Campbells box dinners)
Tuesday – Baked Fish (w/ lemon), Steamed vegetables, Green beans, Hushpuppies
Wednesday – Country Fried Steak, Mashed potatoes, Peas, Bisquits
Thursday – Leftover Buffet
Friday – Chicken Soup w/ sandwiches
Saturday – eat out
Sunday – Chicken Rarebit (new recipe) w/ french fries or chips & dip

Menu Plan Monday

Hello everyone. I’m happy to say that my menu last week was a success. And the white sauce I made turned out to be delicious. I’ll be sure to post the recipe in the near future. Now moving right along to this week’s menu. I’m planning to make few of mine & my husband’s favorite dishes this week, and I’ve also found a new recipe to try for Chicken Florentine (which will more than likely be an upcoming recipe of the week, so stay tuned!)

Monday – Grilled chicken sandwiches w/ fries.
Tuesday – Chicken & Dumplins w/ pinto beans & cornbread (one of my fave meals)
Wednesday – Chicken florentine casserole w/ steamed vegetables (new recipe!)
Thursday – Ham steak & leftovers from Tuesday & Wednesday
Friday – Pizza
Saturday – eating out, probably Chinese or Applebees
Sunday – Cheeseburger Macaroni, corn & veggies

Menu Plan Monday

Hello everyone. Welcome to another Menu Plan Monday. Since going out of town last weekend I’ve been a bit under the weather and sort of fell behind on just about everything from checking email to cleaning house to filing & doing paperwork. My husband told me not to worry about it, but I just can’t help it. I hate falling behind, especially when I have a lot of projects I’m trying to get going on top of every day work. But hopefully this week I can start “regrouping” and get back on track. So let’s get started with my weekly menu.

I’m looking forward to this week. I’m making potato soup, which is a big favorite of mine. And I’m also making some chicken with white sauce, a favorite Southern recipe, made even more popular by Big Bob Gibson, originally out of Decatur, Alabama, just a few miles from where I grew up.

Here’s kind of a cute story. We ate grilled chicken with white sauce all the time when I was a kid, and I just always assumed that everyone ate it everywhere until my husband informed me that nobody that he knew of served it in the Southern part of our state (where he was from) largely because it’s on the gulf and they’re big into seafood down here (not barbecue), and he had never had barbeque w/ white sauce till he moved to the Tennessee Valley to go to college (where he met me). Well, the first time I ever took him to eat at Bob Gibson’s resturant, he got very excited when he saw the white sauce on the table, and said, “Oh, this stuff is great. I’d never had this till I moved up here. Have you tried this?” And I’m just kind of sitting there a little confused and thinking, “It’s just white sauce.” He was pleased when I told him that my mom had a recipe for white sauce and that I’d make it for him sometime.

Well, another blogger out of Long Island, New York (sorry I can’t remember what site it was) did a post on barbeque this week, and they just happened to mention Big Bob Gibson, so I got inspired and decided it would be a good week to break out my mom’s recipe and try to make it for my first time. (wish me luck)

Wednesday – Chicken w/ white sauce, potato salad, baked beans
Thursday – Left overs
Friday – Chicken Alfredo w/ bread sticks

Menu Plan Monday

Last week I tried out the chicken noodle casserole, and it was absolutely delicious. In fact, as I went though the preparation process, I had a taste, and it was so good that I decided to leave out a couple of ingredients. In fact, it tasted just like a recipe for chicken & dumplings that a friend of my family used to make. I took a photo of the dish & will definitely do a separate post on this recipe very soon in the future. Now time to look at this week’s menu.

Monday – Buffalo Chicken Fingers & Fries
Tuesday – Lemon Chicken w/ Brocolli & herb rice
Wednesday – Beef Stroganoff w/ steamed vegetables
Thursday – Chicken & Stuffing Skillet w/ corn & green beans

Menu Plan Monday

In this week’s menu I’ve included a recipe for Chicken Noodle Casserole. It’s a new recipe that I just recently came across, and I’m going to be trying it for the first time. I’ll let you know how it turns out. And speaking of new recipes, over the next couple of weeks, I’ll be posting some new recipes for Super Bowl Sunday and Valentine’s Day. (so back soon, food lovers!)

Now here’s my menu for the week:

Monday – Sloppy Joes
Tuesday – Chicken Noodle Casserole w/ steamed vegetables (recipe below)
Wednesday – Chicken, Aug Gratin Potatoes, & Green Beans
Thursday – Leftovers
Friday – Breakfast for supper
Saturday – Eating out
Sunday – appetizers & snacks (for Super Bowl)

Chicken Noodle Casserole
Ingredients:
1 can (10 3/4 ounces) Condensed Cream of Chicken and Mushroom Soup
1/2 cup milk
1/8 tsp. ground black pepper
1/3 cup grated Parmesan cheese
2 cups cubed cooked chicken OR turkey
3 cups cooked medium egg noodles (about 3 cups dry)
Chopped fresh parsley for garnish
Directions:
In large saucepan mix soup, milk, pepper, cheese, chicken and noodles. Over medium heat, heat through, stirring occasionally. Garnish with parsley.
Tip: For 2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound skinless, boneless chicken breasts or thighs, cubed, 5 min. or until chicken is no longer pink.

Menu Plan Monday


Hello everyone! Well, here’s my second MPM post. Just a quick note: I’ve decided to keep this feature for now, along with the other features that I introduced over the last couple of weeks. (I had a couple of other ideas I wanted to try, but I dropped them at the last second.) My goal is to try and do MPM each week, although sometimes I go out of town on weekends, so I may not always be on to do the post. Sweet Thursday posts will be up 2-3 times a month (at least once every two weeks or more frequently if I see something that strikes my fancy to post on). And the Quick Meals & Simple Tips will come out 1-2 times each per month. If anyone has any further suggestions for me, let me know. This is all subject to change, of course, but for now that is the plan.

Monday – Chicken w/ Ranch Sauce, vegetables
Tuesday – Potato Soup
Wednesday – Roast beef & gravy w/ mashed potatoes & peas
Thursday – leftovers
Friday – Mexican Chicken Casserole

Menu Plan Monday

Okay, here is another new feature I’m considering for the blog. This idea came from the blog I’m an Organizing Junkie. It is an excellent blog that you should check out. The only problem with this feature is that the post would have to go out on Sunday or Monday, and I don’t always post on these days. However, I think this is a fun idea and a good way to start the week. And if my schedule doesn’t permit, I can always run the feature a day late or just do it every other week. We’ll just have to see. (Pardon me for rambling with my thoughts, but since I’m still deciding on whether to keep all the new features, I think my thoughts could actually help you to help me decide on what to do.) Anyway I just have one or two more ideas, and I then I’ll be making the final decision. (so let me know, what you think.)

The point of Menu Plan Monday is to encourage people to plan out their meals ahead of time. You can save time and money with just a little planning. For example, if you plan out your meals ahead of time, you can make one trip to the store, instead of several small trips, and if you know ahead of time what you’re going to cook you can plan all other events around the time it takes to cook your meal. Not to mention, it feels so good to actually know the answer to the infamous question, “What’s for dinner?” This is also a good opportunity to share ideas and recipes.

So here it is, my first menu plan:

Monday – Grilled Chicken w/ Steamed Vegetables
Tuesday – Pork chops & Rice w/ Green Beans & Rolls
Wednesday – Vegetable Soup & sandwiches
Thursday – Left overs
Friday – Chicken Fingers and fries
