Southern Brownie Pie

With Thanksgiving right around the corner, it seemed like the perfect time to share this classic, Southern recipe.  This Southern Brownie Pie is yummy served warm or cold, and it’s sure to please everyone at your table.  My husband isn’t really a chocolate fan, and he doesn’t like pies at all, but he couldn’t get enough of this one!

Recipe for Southern Brownie Pie:

Ingredients:
1 14 oz. can of sweetened condensed milk
1/4 cup butter
1/2 cup unsweetened baking cocoa
3 eggs (beat lightly)
3 TBS plain flour
1 tsp vanilla flavoring
3/4 to 1 cup chopped nuts (optional)
1 pie crust (I used store bought)
Directions:First, make the pie crust. If you are not a good crust maker, you can use the frozen kind or the roll out kind. If using a frozen crust, let it thaw completely.
Get a medium sauce pan. Put the milk, butter, margarine, and cocoa in the pan. Turn the heat to low and slowly warm until everything is melted and mixed together. Stir occasionally so the mixture does not stick to the pan and scorch.Take the chocolate mixture off the heat.
Put a spoon of the chocolate mixture in with the eggs beaten in a small bowl. This helps adjust the temperature and keeps the eggs from curdling. Next, stir in the eggs, flour, vanilla.  Fold in nuts. (Chopped pecans or walnuts are good in pies; however, I left these out.)
Pour into pie shell. Bake at 350 degrees for 40 minutes in a 9 inch pie pan (50 minutes in smaller pan). The pie is done when the center is set.
Tips for Serving:  This is really good when it’s hot, but it’s also good served cold or at room temperature. After it cools down, to serve it hot again, place in the microwave for 15-20 seconds.  Top with ice cream or whipped topping and chocolate syrup for an extra sweet treat!

My Review:  I think this is an excellent book! I love pies and I love cupcakes, so the idea of a mini, cupcake-sized pie is right up my alley.  And I was impressed by the variety of recipes included.  The book has everything from my favorite Chocolate Cream to my dad’s favorite Custard, and my mom’s favorite Lemon Meringue!
It also has the classic holiday favorites that everyone loves: apple, pecan, pumpkin, and cherry!
And along with the pies themselves, you’ll also find great recipes for pie crusts and pie toppings, as well as a great tutorial for making Pies in Jars!

And all the color photos are so beautiful and inspiring!  They will definitely make you crave the pies!

Recipe for Apple Chai

“An apple chai a day keeps the doctor away.” 
Ingredients:
2 apples peeled, cored, and diced into ¼-inch pieces (we like Granny Smith for this pie) 
¼ cup brown sugar 
¼ cup granulated sugar, plus extra for sprinkling 
½ teaspoon ground cinnamon 
⅛ teaspoon ground cardamom 
¼ teaspoon ground allspice 
1 teaspoon vanilla extract 
1 tablespoon lemon juice 
Perfect Pie Crust (recipe in book)
 ¼ cup soy milk 
Directions:
1. Preheat the oven to 350°F. Generously grease a 12-cup muffin tin with butter or cooking spray. 
2. Combine the apples, brown sugar, granulated sugar, cinnamon, cardamom, allspice, vanilla, and lemon juice in a large bowl. Let sit for 10 minutes to allow the flavors to blend. 
3. On a thoroughly floured surface, roll out the pie crust to a thickness of 3∕16 inch. Using a 4-inchdiameter round cutter, cut 12 crusts. Re-form and re-roll the dough as necessary, keeping plenty of flour on your work surface. 
4. Using the mini cookie cutter of your choice and leftover pie crust, cut out 12 shapes to use as pie toppers. (We like stars for Apple Chai pies.) 
5. Carefully shape the crusts into the wells of the muffin tin, crimping the edges with your fingers. 
6. Fill each mini pie with 1½ tablespoons of the apple mixture. The filling will settle while baking, so it’s best to fill the pies higher than the top of the muffin tin. Top each mini pie with a pie topper. 
7. With a pastry brush, lightly brush the pie crusts with soy milk, then sprinkle with sugar. 
8. Bake for 20 to 25 minutes, until the crusts are golden brown. Allow to cool for a few minutes in the muffin tin, then carefully remove the pies from the tin and place on a wire rack to finish cooling. To remove, first try to spin the pies in the muffin wells. If they need a little extra help, run a butter knife along the edge of the crusts to pop them out of the tin. 
9. Serve, or store in an airtight container at room temperature for up to 2 days.Sweet tips : Be sure to dice the apples to a fine ¼-inch dice to minimize settling during baking.

Pumpkin Bread

Fall weather is finally in the air around our house!  It really makes me crave the tastes of fall and all those great Thanksgiving classics!
Today I’m sharing a little taste of fall. I made a little tray of fall goodies for my husband to carry to work last week, and the Pumpkin Bread was a very popular treat. Hope you enjoy!


Recipe for Pumpkin Bread:
1 1/2 cups sugar
2 eggs, slightly beaten
1/2 cup oil
1 cup pumpkin
1 3/4 cups flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/2 tsp. cloves
1/2 tsp nutmeg
1/4 tsp allspice
1/3 cup water
1/2 cup nuts (optional)

Directions: Mix sugar, eggs, oil, and pumpkin in a bowl.  Add dry ingredients and water in the order listed above. Mix well. Stir in nuts (if using). Pour into a greased and floured loaf pan and bake at 350 degrees for 1 hour or longer if needed. Makes one loaf.

Tip: For a sweet dessert bread, top with a little cream cheese frosting. Yum!

Recipe of the Week: Egg Custard Pie

I made something a little different for this week’s featured recipe. This week was my dad’s birthday, and for the occasion I decided to make my first attempt at an Egg Custard Pie. I remember my grandmother making these for my dad when I was still a kid. He loved them, but I don’t recall him ever getting the recipe for it or attempting to make it himself, which is kind of odd because my dad’s always trying new recipes. Anyway, my dad feels that he has basically everything he needs, and he’d much rather receive a gift that someone made for him as opposed to something that’s been bought, so for his birthday, I wanted to try this recipe.

I have to admit, I was a little clueless here. Not only had I never made this, but I’ve never even tasted one before! So I had nothing to compare it to, other than the memory of what my grandmother’s pie looked like! And there were only about half a dozen different recipes to choose from in my books! So basically I went in to this, knowing that at the very least my dad would be happy that I even made the attempt and he’d be pleased that I paid attention and remembered that he liked this pie.

 Well, that idea turned out to be a major understatement. When I showed up with the pie, my dad was thrilled! He said that he didn’t think he’d had one since the last time my grandmother made one before she got sick, which was about 15 years ago! He was very surprised and happy, and upon tasting it, he said it was just as good as the one’s grandma used to make. (yay!) I actually can’t remember the last time I saw him react to a gift like that, so it was very touching, and made me very happy as well!

Works for Me Wednesday: Ultimate Fudge Truffles, An Easy Treat for The Holidays

The Thanksgiving/Christmas season will soon be upon us, which means millions of people will be flocking to the massive store displays of baking ingredients and returning home to their kitchens to create an array of cakes, cookies, and confections. Yum!

I love this time of year, and I love baking. But I sometimes dread making Christmas candy. I, of course, love the end result and enjoy eating the fruits of my labor. But I think my candy making process sometimes looks a lot like Lucy and Ethel in the chocolate factory.

That’s why I love recipes like the one I posted last week for my recipe of the week. The unbaked caramel cookies were quick and easy to make, and the process didn’t totally destroy my clean kitchen. Here’s another easy treat that you can make for for this holiday season:

Betty Crocker’s Ultimate Fudge Truffles are a great treat that you can make in minutes. These are perfect to carry to a Thanksgiving or Christmas party or to stuff in your Christmas candy gift baskets. You only need a couple of ingredients to go along with the kit, and the process is simple.

Simply mix the ingredients, heat in the microwave, spread out the batter, and let it set for a few minutes. Then cut the batter and form into balls. You can then roll them in the topping of choice. The kit comes with cocoa to roll the truffles in, but I chose, instead, to leave some plain while dipping others in powdered sugar or sprinkles. You could also use chopped nuts or give them a drizzle of caramel or fudge. The kit even comes with little wrapper/cups to put the truffles in.

This and other dessert kits are great if you don’t have time to look up a bunch of recipes and shop for a bunch of ingredients, or if you’re just not a skilled baker. It can also save you a lot of money because you’re not having to puchase an entire cart full of ingredients.


I totally recommend this kit to all you chocolate lovers out there and to anyone who, like me, loves to eat candy and treats and is looking for something easy & quick to make.

Post Update: I should mention that these truffles remind me more of fudge brownies than of the little truffles you get in the store with the chocolate shell. If you want a chocolate shell on them, I guess it would be easy enough to melt a couple of squares of bakers chocolate and dip them. But again, I love them as is, and my husband liked them too. (And he’s not even a choc-o-holic!)

Thanksgiving Recipe: Marshmallow Pilgrim Hat Cookies

INGREDIENTS:
24 chocolate-striped shortbread cookies
12-ounce package of chocolate chips
24 marshmallows
tube of yellow decorators’ frosting

Set the chocolate-striped cookies stripes down on a wax-paper-covered tray, spacing them well apart.
Melt the chocolate chips in a microwave or double boiler.
One at a time, stick a wooden toothpick into a marshmallow, dip the marshmallow into the melted chocolate, and promptly center it atop a cookie.
Using a second toothpick to lightly hold down the marshmallow, carefully pull out the first toothpick.
Chill the hats until the chocolate sets, then pipe a yellow decorators’ frosting buckle on the front of each hat.

A Guide to Organized Holiday Shopping: Black Friday, Part 2

Here is part 2 of my Black Friday holiday shopping guide. I hope you’ll find it helpful.

5. Making a shopping list – On a sheet of paper make a list of each store you plan to go to and under each store’s name, make a list of the items you plan to buy there. Put a star next to the items you are most interested in. This will help you to prioritize your list.

6. Prioritizing & organizing the stores on your list – At this time you should prioritize and decide which stores you want to go to first. In my opinion, this is the most important step. There are a number of factors to base priorities on. You can use these factors to make one list, or a make a couple of lists based on these factors and coordinate the two.

  • Time of sale – Each store ends its sale at a different time. Some go until 11am or noon. Others are over by 10am. Then there are others that have sales for the entire weekend. Obviously you should first go to the stores that end their sales earlier.
  • Items you are most interested in – If a particular store has something that you especially want, you should go there first thing. Many of these items will be in limited quantities at the stores, so you should get there early.
  • Location of stores – In order to save time and gas, you should keep the locations of the stores in mind. Think of how close they are to your home and how close they are to one another, and map out your shopping route to avoid driving back and forth.
  • Normal everyday items versus the extraordinary – Keep in mind that many of the items in the sale ads are not going to sell out. In fact some of the items, namely bath and perfume gift sets, movies, and clothes, will be available for the next month, so try to save yourself time and buy these items later. Meanwhile focus your efforts on the “extraordinary.” Popular toys and electronics may or may not be available later, so you should put these as a top priority.
  • A store with one good item versus several – Some stores on your list may only have one thing that you want, whereas others will have an entire stock of things you are interested in. I would advise going to the stores that only have one or two items that you want first. Then when you go to the store that has several items, you’ll have more time to look around because you will have already been to the other stores. However, if you feel time slipping up on you, you may want to skip a couple of these stores that only have one item that you want, so that you can get to these other place before the sales end.

Once you have your priorities straight, and you have a well organized list, you should be ready to brave the shopping world. Don’t forget to bring your shopping list and your ads with you on your shopping trip. Also remember not to stress too much, and try to be patient and friendly with fellow customers. Getting the latest Elmo toy is not a matter of life and death. Don’t yell at someone if they get in your way or pick up the item that you wanted. The most important thing is to have fun and stay safe. Happy Shopping!
