To conclude our series of wedding and shower posts, we have a collection of wedding cakes. I’ve included my own wedding cake here, along with some from other bloggers and website owners. I am absolutely amazed at the variety of cakes that I’ve seen. I hope you like them too!
Berry Cheesecake

Recipe for Berry Cheesecake:
Ingredients:
8 sheets phyllo dough (14 inches x 9 inches)
6 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 cups fresh or frozen blueberries
1/2 cup strawberry jelly
1 cup whipped topping
Sliced fresh strawberries and additional blueberries, optional

5 Minute Chocolate Mug Cake
I got this week’s recipe back in March from the blog, Cynnamama’s Cafe. This is one of the blogs I found during the Ultimate Blog Party. At that time I’d never heard of the recipe, but since then it’s been on a lot of other blogs.
If you haven’t tried it yet, I highly recommend it! It’s great for a quick snack, but I think if you needed to make a last minute dessert for company coming over, a few of these cakes would be great for that purpose as well.
Recipe for 5 Minute Chocolate Mug Cake
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes. It’s okay if the cake rises above the mug. Allow to cool a little, and tip out onto a plate if desired. Serves 1-2 people.
I actually made mine in a little bowl instead of the coffee mug, because apparantly I have a problem following directions. lol. If you’d like to see what the cake looks like in the mug you can see it at Cynnamama’s blog.
-As you can see, I cut my cake into fourths, and then I placed two of the fourths on to a bowl with ice cream for serving. The ice cream and chocolate syrup really added a lot, and made it look very attractive.
-I didn’t use the chocolate chips, but I bet they’d be delicious. I also think it would be good with white chocolate chips or peanut butter chips. You could also try adding a teaspoon of chopped nuts and even a couple of marshmallows for a rocky road cake.
-This cake reminded me a lot of Betty Crocker Warm Delights. Next time I make these, I plan on topping it with caramel or hot fudge before baking to see if it truly measures up to the warm delights.

Hubby’s Birthday Cupcakes
No recipe this week. Instead, I’m sharing the cupcakes that I made for my husband’s birthday last month. I decided to share these this week, so that I would have an entry for my own cupcake round-up this Thursday.
My husband is very easy to please in the dessert department. He’ll try just about anything, but he only has a few things that he just absolutely LOVES. This is both good and bad. It’s good because I don’t have to go out of my way and make anything very elaborate for him to like it, but it sort of puts a damper on trying new recipes when I know he’d rather have one of his old faithfuls.
Anyway, in the cake department, he likes coconut cake and yellow cake with chocolate icing. Last year I made a yellow sheet cake with chocolate icing, but this year I wanted to do cupcakes instead. (Disclaimer: Please keep in mind that I am no cake decorator by any stretch of the imagination (obviously), but at least I tried.)
I have to admit, there’s nothing like a plain chocolate iced cupcake! They looked so yummy, I decided to leave a few undecorated.
For the cupcake that would go at the top and center of the cupcake tree, I topped it with a Samoa Cookie and stuck a candle in the middle. My husband loves those cookies!
Here’s the tree. In the future I’d like to use ribbon/tissue and what not to make it a little more attractive, but seeing as we weren’t having a big birthday party, I saw no reason to do that this time.
In fact, my husband was impressed with the cupcake tree. He was with me when I bought it, but I guess he wasn’t paying attention or he didn’t remember it. So he was pretty wow’d by it, and was telling everyone about it later on.
For the other cupcakes, I used shredded coconut, candy sprinkles, and little Cadbury Mini Eggs.
I hope you all enjoyed these. I really enjoyed making them and EATING them!

Recipe of the Week: Pineapple Angel Food Cake
This week I’m sharing a yummy recipe for Pineapple Angel Food Cake. My mom made this a couple of weeks ago and gave me some slices to take home (hence, there’s no photo of the whole cake).
This is the perfect dessert for spring and summer. And this was very easy because it was made using an angel food cake mix. But of course, you could incorporate this into a homemade angel food cake recipe as well. Enjoy!
Ingredients:
1 box of angel food cake mix
1 (15 oz) can pineapple chunks, drained
1/2 cup coconut
Directions: Mix up angel food cake batter as directed. (The kind I used only required that you add 1 1/4 cups of water before mixing.) Then add ginger and coconut and mix. Fold in pineapple chunks. Pour into a tube pan or a 9X13 pan. Bake as directed on box.

Recipe of the Week: Pistachio Dessert Salad
Today I’m sharing the recipe that I use and some variations on the recipe.

Add a splash of color and flavor by mixing in OR topping with Maraschino cherries.
-
Substitute a can of fruit cocktail for the pineapple. Or if you like a lot of fruit, mix in the fruit cocktail in addition to the pineapple.

Another great item to subsitute or add to the mix is mandarin oranges.

My mom makes a red/pink version of this using cherry or strawberry jello and Maraschino cherries.

If you want a green salad, but you don’t like pistachio, you can use lime gelatin instead.

Another version I’ve heard of uses orange jello, mandarin oranges, and/or pineapple.
Personally I love this pistachio version. What do you guys think?
