The countdown to back to school is officially on.  Next week we are going to pay our son’s class fees so that he can get his school schedule, and then we’ll be buying school supplies and shopping for new clothes.  And even though we’ve still got a couple of weeks to go, I’m already thinking of menu ideas for all those back to school weeknights.  If you read my blog regularly or just look at the title, you will know that I embrace simple solutions, and that includes simple meal ideas.  Simple meals made with simple ingredients not only save me a lot of time and hassle, but they make my family happy.  And the great thing about some of our favorite meals, is that I can easily change them up to create all new favorites!

One of my son’s favorite meals is tacos.  I think he would eat tacos every single day if we would let him!  While I don’t want to cook tacos every night, I do enjoy coming up with similar alternatives to tacos such as quesadillas and Mexican Pizzas!  Today I’m going to show you how we make our Mexican Pizzas, and I’ve also got some coupon deals on Campbell’s products like Pace Chunky Salsa! A couple of weeks ago I shared a delicious recipe for Pulled Pork Nachos.  Pulled pork is an absolute Southern staple and one of my favorite foods!  I love ordering it from local barbecue places, and I also love making it at home!

The only problem with making it at home is that it takes several hours to cook, which means I always have to plan ahead and be prepared to spend a day or an evening watching over the meat as it cooks.  It’s definitely well worth the time and effort, but I don’t always have time to do this!  And when I’ve been busy working all day and it’s time to pick up Noah from school, I definitely don’t have the time to cook a whole pork roast in time for dinner….until now!  Enter Farm Rich® Smokehouse Pulled Pork BBQ!

This pulled pork is just as delicious as anything you can make at home or get from a bbq stand, and it cooks up in the microwave in minutes!  Today I’m going to show you how I paired this delicious pulled pork with some Birds Eye Steamfresh® Flavor Full Sour Cream and Onion Potatoes to make a delicious and easy weeknight meal!

Easy cooking with Tyson and Birds Eye

“I’m hungry!”  This phrase is uttered so many times a day in my house by everyone, including me!  I thought that I’d have more time for cooking with school out, but boy, was I wrong!  The last few weeks I’ve been dealing with a pretty big work load, and on top of this, we’ve been doing improvements around the house: painting, de-cluttering and organizing, rearranging furniture. Ah!

By the time I get done with everything else I have to do, the last thing I want to do is cook.  And yet, “I’m hungry!” continues to echo through the hall (and in my own mind and stomach).
