Pork Potato Casserole Served

A couple of weeks ago I shared a delicious recipe for Pulled Pork Nachos.  Pulled pork is an absolute Southern staple and one of my favorite foods!  I love ordering it from local barbecue places, and I also love making it at home!

The only problem with making it at home is that it takes several hours to cook, which means I always have to plan ahead and be prepared to spend a day or an evening watching over the meat as it cooks.  It’s definitely well worth the time and effort, but I don’t always have time to do this!  And when I’ve been busy working all day and it’s time to pick up Noah from school, I definitely don’t have the time to cook a whole pork roast in time for dinner….until now!  Enter Farm Rich® Smokehouse Pulled Pork BBQ!

This pulled pork is just as delicious as anything you can make at home or get from a bbq stand, and it cooks up in the microwave in minutes!  Today I’m going to show you how I paired this delicious pulled pork with some Birds Eye Steamfresh® Flavor Full Sour Cream and Onion Potatoes to make a delicious and easy weeknight meal!

Do you love TGI Friday’s?  I love eating their appetizers, and when we can’t go out, I love buying their frozen appetizers.  They are especially great for game days.  Just visit your local Wal-mart, pick out a few apps, and you’ve got enough food to create an entire spread for a house full of sports fans!

Au Gratin Potatoes, Thanksgiving Sides, and a Giveaway from Country Crock!


As we prepare for Thanksgiving, a lot of fuss will be made over the turkey and dressing (or stuffing), but what about all the sides?  Without sides the meal just wouldn’t be complete, would it?  This Thanksgiving fill your table with vegetable sides, made using Country Crock.

Au Gratin Potatoes

Since summer is almost here, I thought it would be a good time to share a great side dish for barbecues and summer parties.  So I decided to share these Au Gratin potatoes that my mom made. Don’t they look delicious?  This another one of those recipes that you just sort of throw together and do what you will with it. Hope you enjoy!

Recipe for Au Gratin Potatoes:
Ingredients:
5-7 potatoes (depending on size and how much you need)
1 small onion (sliced into rings, or decided if you prefer)
shredded cheese (I’d use cheddar or a combination of cheddar & monterey jack)
salt & pepper
Directions: Peel your potatoes, boil them until tender.  Chop up your onion.  You can saute it on the stove top if you prefer your onion to be tender.  After draining the water off your potatoes, transfer to bowl.  Mix your potatoes, onions, and cheese together. (Amount of cheese is up to you.  I like mine very cheesy!)  Season with salt and pepper.  Pour up into glass baking dish.  Top with additional cheese.  Bake at 350 for a few minutes (Just long enough to melt cheese.)  That’s it!
Tips & Suggestions:
If you’d like to add a little spice to this dish, try adding some chopped peppers.
For creamier potatoes, add a little milk and/or melted butter.
