Chocolate Footballs and Other Nostalgic Candies

I know this will completely shock everyone, but I’ve got a real sweet tooth and love candy!  I often think about candies I used to eat when I was a kid, which either aren’t available any more or else are very hard to find.  This includes chocolate footballs, Sixlets, candy cigarettes, chocolate coins, Chick-o-sticks, and Zotz, just a name a few.

In fact, every time I go to a little grocery store or gas station, I always look to see if I can find any of these, especially the chocolate footballs.  Shortly after I met my husband, we stopped in at a gas station to get drinks, on our way to eat dinner and hang out with friends, when suddenly I found this box of chocolate footballs.  It was the first time I’d seen them in years, and I freaked out with excitement.  This was fairly early in our relationship, and he could not believe I’d get this excited over candy.  I immediately grabbed a couple of handfuls and asked him to get them for me.

I haven’t found the chocolate footballs since then, so I was thrilled when I found them over at Blair Candy.  This site has a fabulous selection of bulk candy as well as regular size containers of candy.  Their stock includes popular favorites like Reese Cups and Snickers, as well as novelty candies like gummy hamburgers and candies in fun containers, and nostaglic candy like my chocolate footballs, Coconut Long Boys, Boston Baked Beans, and even wax lips!

Go over and visit Blair Candy and place your orders for Halloween.  And don’t forget to enter the code: GHOST at check out to get 10% off your order.

Homemade Peanut Butter Cups

I’m really excited to bring you this week’s recipe!  It is a homemade version of one of my all time favorite candies—the peanut butter cup!
I first saw this recipe in Taste of Home magazine a few years ago, and I marked the page but never got around to trying the recipe. (This tends to happen a lot with me.)  But a few days ago, I was wanting to make some kind of new spring/Easter treat, so I started looking through my old magazines, and found these again.  I had all the ingredients I needed, and they were pretty easy to make, so I decided to give it a whirl!
I have to warn, these things are very tasty!  They remind me of the gourmet peanut butter cups that you order, except they’re much cheaper, and the peanut butter is more sweet, almost like a Reese Cup!  And since these are so easy to make, I’d say if you make them once, you’ll probably be tempted to make them again and again.  So don’t say I didn’t warn you!  Hope you enjoy!
Recipe for Homemade Peanut Butter Cups:
Ingredients:
1 cup creamy peanut butter, divided
4-1/2 teaspoons butter, softened
1/2 cup confectioners’ sugar
1/2 teaspoon salt
2 cups (12 ounces) semisweet chocolate chips
4 milk chocolate candy bars (1.55 ounces each), coarsely chopped
Colored sprinkles, optional
Directions:  In a small bowl, combine 1/2 cup peanut butter, butter, confectioners’ sugar and salt until smooth; set aside.
In a microwave, melt the chocolate chips, candy bars and remaining peanut butter; stir until smooth.
Drop teaspoonfuls of chocolate mixture into paper-lined miniature muffin cups. (I didn’t have any miniatures, so I used the regular sized cups and started with about a tablespoon of chocolate in each cup, but I recommend making miniatures, because these things are rich!)
Top each with about a teaspoonful of peanut butter mixture. (For the regular sized cups, I actually used a cookie scoop to measure, so it was just under a tablespoon of peanut butter.  Then I rolled it into a ball See pic below.)
Then top with another teaspoonful of chocolate mixture. (tablespoon for regular size cups)
For fun and extra added cuteness, decorate with sprinkles! Refrigerate until set. Store in an airtight container.
This makes 3 dozen minature cups, and anywhere from 12 to 18 regular sized cups, depending on how you distribute the ingredients and how big you make the cups.

Darn Good Chocolate Cake Drizzled in White Chocolate

This week I’m proud to present one of my favorite cake recipes yet! I got the recipe for Darn Good Chocolate Cake out of the Cake Mix Doctor by Anne Byrn. This bundt cake is fabulous! The recipe doesn’t call for icing or any toppings, and let me tell you, it certainly doesn’t need any toppings.

But when I made it, I decided to give it a little something extra. I melted just a couple squares of white chocolate and drizzled it over the top. It added a light sweetness to this rich, decadent chocolate cake, and if I do say so myself, it made it a lot more attractive too! This cake would also be delicious with a milk chocolate icing if you prefer that.

And don’t forget to break out the ice cream or a jug of milk when you get ready to serve. You’ll need it!

(NOTE: Sweet Thursday round-up next week! Email your Valentine Dessert to me by next Wednesday if you’d like to be featured here. Also, I will be putting up a linky next week for anyone who wants to link up their Valentine treats!)

Here are just a couple of pictures of the cake without the white chocolate. Doesn’t that look delicious?

Recipe for Darn Good Chocolate Cake:

Ingredients:1 Devil’s Food or dark chocolate fudge cake mix
1 package (3.9 oz) chocolate instant pudding mix
4 large eggs
1 cup sour cream
1/2 cup war water
1/2 cup vegetable oil
1 1/2 cups semisweet chocolate chips (I left these out)
Directions: Preheat oven to 350 degrees. Lightly mist a bundt pan with cooking spray. Also, dust with flour if you like. (I skipped this.) Shake out the excess flour and set pan aside.

Place the cake mix, pudding mix, eggs, sour cream, war water, and oil in a large mixing bowl. Bleand with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 to 3 minutes more, scraping the sides down again if needed. The batter should look thick and well combined. Fold in the chocolate chips, making sure they are well distributed throught the batter. Pour the batter in prepared pan. Place in oven.

Bake the cake until it springs back when lightly pressed and just starts to pull away from the sides of the pan, about 45-50 minutes. Remove the pan from the oven and let it cool for 20 minutes. rung a long sharp knife around the edge of the cake and invert it onto the rack to cool completely, 20 minutes more. Or invert it onto a servig platter to slice and serve while warm.

*White Chocolate Instructions – I used a couple of squares of white chocolate. Place these in a bowl and begin heating in the microwave for up to 90 seconds, stopping to stir at 15 second intervals to prevent scorching.*
