Easy Coconut Pie

In addition to the weekly events I participate in, I’m happy to be sharing my weekly recipe over at the Love the Pie Party hosted by Tidymom.

I’m accustomed to seeing coconut pies with a meringue, but I found this recipe over at the Bisquick website, and it sounded pretty good. It’s a very quick and easy recipe, so if you like coconut, you should give a try!


Recipe for Easy Coconut Pie:
1 cup flaked or shredded coconut
3/4 cup sugar
1/2 cup Bisquick
1/4 cup butter or margarine, softened
2 cups milk
1 1/2 teaspoons vanilla
4 eggs

Directions:
Heat oven to 350ºF. Grease 9-inch pie plate with shortening or cooking spray.
In medium bowl, stir all ingredients until blended. Pour into pie plate.
Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

Witch Cupcakes

This week I wanted to share something fun for Halloween. My stepmom Donna first saw these witch cupcakes in a magazine, and she’s planning to make them for a big Halloween party and hayride that her son and his wife hold each year for the kids.

By the way, Sweet Thursday is coming up this week. If you have a sweet Halloween treat or a fall dessert to share with us, send it my way!

Recipe for Witch Cupcakes

Ingredients
1-1/2 cups chocolate frosting
1 package (4-3/4 ounces chocolate cones (Nabisco Oreo Cones)
Orange nonpareils
1 can (16 ounces) vanilla frosting, divided
Neon-green food coloring
12 cupcakes, removed from paper liners
Chocolate chips
Green and red tube icing
Mike and Ike Tangy Twister candies
Chocolate Jimmies
Directions
1. Place chocolate frosting in a freezer-weight zip-top bag and snip off a small corner. Pipe base of cones, dip in orange nonpareils, and set aside.
2. Place 1/2 cup vanilla frosting in a another zip-top bag and snip off a small corner. Tint remaining frosting green and frost cupcakes.
3. Turn cupcakes on sides, then place decorated cones on top. Using vanilla frosting, pipe eyes on cupcakes. Attach chocolate chips for pupils and pipe a dot onto chips. Use red icing for mouths, green icing for warts; shape candies into noses. Pipe chocolate icing onto cupcakes for hair and sprinkle with chocolate jimmies.

Miss Bonnie’s Sweet Bread

In honor of my blogiversary celebration, I made husband’s favorite: Sweet Bread. When I first started dating my husband, he traveled down to Mobile to have Thanksgiving with his family, and he brought a loaf of Sweet Bread back with him. It was yummy!

My husband’s mom (a.k.a. Miss Bonnie) has been making this recipe for years. The “official” title for this recipe is “Aggie’s Sour Cream Pound Cake,” but my husband calls it Sweet Bread or Nut Bread. And it actually reminds me a lot of Amish Friendship Cake (or bread), which my dad used to make a lot, (exept with this recipe you don’t have a starter, and it doesn’t take weeks to make, which is a really good thing!) Whatever you choose to call it, it is delicious!


Recipe for Miss Bonnie’s Sweet Bread:

Ingredients:
2 3/4 cups sugar
3 1/4 cups all purpose flour
6 eggs
2 1/2 sticks margarine
1 8 oz cup sour cream
1/2 tsp salt
1/4 tsp baking soda
2 tbsp flavoring (any kind) **I used vanilla.
1 cup nuts (optional) **I used walnuts.

Directions: Cream margarine and sugar together. Add eggs one at a time, beat after each. Add flour, salt, and baking soda. Mix. Add sour cream and flavoring and beat for 2 minutes. Add nuts and fold in till evenly distibuted throughout batter. Pour into large tube pan. Preheat oven to 325 degrees and bake for one hour and thirty minutes.

Easy Autumn Pear Cake

I posted this recipe last year, and I’m reposting it for Fall Festival over at Life as Mom. This recipe comes from Kraft. It’s called Easy Autumn Pear Cake, and as the recipe name implies it’s easy to make and a perfect recipe for fall. It’s always great to find recipes like this. It’s sweet, but not too sweet, which makes it perfect for all occasions and for just about any group. Try it out for some light snacking at home, or serve it up at your family’s potluck dinner this Thanksgiving.

Recipe for Easy Autumn Pear Cake

Ingredients:
1 egg
1/2 cup BREAKSTONE’S or KNUDSEN Sour Cream
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened 1 pkg.
yellow cake mix
7 Tbsp. butter, melted, divided
1 can (15 oz.) pear halves, drained, sliced into 1/2-inch slices
1 pkg. (4-serving size) JELL-O Lemon Flavor Gelatin
1/2 tsp. ground cinnamon
1/2 cup chopped PLANTERS Walnuts

Directions:

PREHEAT oven to 350°F. Beat egg, sour cream, cream cheese and cake mix in large bowl with electric mixer on low speed just until cake mix is moistened, scraping side of bowl often. Blend in 1/4 cup of the butter. Beat on medium speed 2 min. (batter will be thick).

SPREAD batter into lightly greased 13×9-inch baking pan. Arrange pear slices evenly on batter, pressing lightly into batter. Sprinkle evenly with dry gelatin mix and cinnamon. Drizzle evenly with remaining 3 Tbsp. butter; sprinkle with walnuts.

BAKE 40 to 45 min. or until toothpick inserted in center comes out clean. Serve warm or at room temperature. Cut into 24 pieces. Cover and refrigerate leftover cake.

Banana Bread

Since muffins and breads are the theme for the Sweet Thursday event I’m hosting this week, I decided to post my banana bread recipe so I’d have something to add to my round-up.

 

I just love banana bread and banana muffins for breakfast or as a snack. Usually I make banana muffins from a mix, because hubby doesn’t like banana flavored stuff, and I don’t like to spend a lot of time on something that’s just for me. But I’ve been wanting to make homemade banana bread for a while, so I searched around and finally picked out a recipe to try. And it actually didn’t take a lot of time to make. It was very good too!


Recipe for Banana Bread

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, or until toothpick comes out clean. Let bread cool in pan for 10 minutes, then remove from pan.

Easy Cinnamon Sticks

Like those cinnamon sticks you get from the pizza place? A couple of weeks ago I was hungry for something sweet, but I didn’t want to spend an hour mixing and baking, so I decided to make my own cinnamon sticks. And they turned out great!

These would be perfect to have for dessert with any meal, especially your own homemade pizzas! And they would also make a great snack and a perfect breakfast food. Enjoy!

(I apologize for the lack of exact measurements, especially on the frosting. This recipe was an experimental-throw-together type thing. It’s amazing what “a little bit of this” and “a little bit of that” can do!)

Recipe for Easy Cinnamon Sticks

Bread Ingredients:

1 can refrigerated pizza dough
1-2 tablespoons butter or margarine, melted
Cinnamon
Sugar (optional)

Icing:
1 8 oz cream cheese, softened
a splash of milk
sugar

Directions: Preheat oven to 400 degrees. Unroll pizza dough and place on baking sheet. Take a knife and make nine cuts in the dough (as shown below). This will make 10 bread sticks. Don’t cut the dough completely in to separate pieces. Just make slits in the dough. When the bread is baked, the sticks will pull apart easily. Next melt your butter, and spread it over the dough. Then sprinkle the dough with as much cinnamon as you desire. If you want your cinamon sticks sticks to be topped with sugar, sprinkle it on at this time too. Bake the bread as directed on the package, about 15-18 minutes.

While the bread sticks are cooking, prepare your frosting. There’s no recipe per se for the frosting I made. Just take a block of cream cheese and can cut it into a few pieces and place it in the microwave for 10-30 seconds, or until soft. Then add a small splash of milk and and sugar. Just add a little sugar at a time and stir it until you get your desired taste and consistency. (You can also use confectioner’s sugar if you prefer.)

S’more Sundaes

I love s’mores. Occasionally I make them in the microwave, but let’s face it, if you want to make authentic smores, you gotta have a campfire. Unfortunately I live in an area that’s not only extremely hot, but also extremely humid. The last thing anyone wants to do around here in the middle of July is sit by a campfire. In fact, to steal a joke from a cartoon we watched the other day, “it’s so hot, you have to build a fire to cool off!” (sorry…I couldn’t resist!)Anyway, so I came up with a great alternative to the orginal s’more: S’more Sundaes! I’ll also be posting this for the July edition of Sweet Thursday in a couple of weeks.

Recipe for S’more Sundaes:

 

Ingredients

Vanilla ice cream (or your favorite flavor)

Graham Crackers

Hershey Bars or milk chocolate chips

Marshmallows

Chocolate syrup or hot fudge (optional)

Whipped Cream (optional)

Directions:

To make one sundae, I used 3-4 scoops of ice cream, 10-15 marshmallows, 1/2 hershey bar (chopped), 1 or 2 graham crackers (crushed), and then I topped it with Hershey’s chocolate.

You, of course, can use the ingredient ratio of your choice.

 

Suggestions:

-Place all your ingredients in a blender for s’more blizzard, or add a little milk to make s’more milkshakes.

-For more “s’more-like” quality, try heating your marshmallows and chocolate for a few seconds in the microwave, till their hot and a little melty.
