Over Easy Egg "Scramble"

I’ve always eaten scrambled eggs for breakfast. But some people (let me pause for a minute so I can look around the room) like their eggs cooked other ways.
Let’s just say, I was very excited at the beginning of my married life when I was making my first breakfast, and my hopes were very quickly dashed, when I was told, “I like my eggs cooked over easy.” And I had to say, “Huh? What is that?” Too funny! Live and learn, I guess!
Anyway, this week I’m sharing what I like to call the Over easy Egg Scramble.  It’s like sort of like a traditional breakfast scramble except it’s got some carbs added in, and of course the eggs are not scrambled, they’re cooked over easy, or as we always said in my house growing up, “fried.”
Hope you enjoy!

Recipe for Over Easy “Scramble”

Ingredients:
3 eggs, cooked over easy
2 servings grits, (according to package directions, I mix 6 tablespoons quick grits with 2 cups water and cook 5-7 minutes)*
3-4 pieces of bacon (use other meat if you prefer)
salt and pepper, to taste
Directions:  Cook grits and bacon first, followed by the eggs.
Place the cooked eggs on plate or bowl. Break the egg yokes. Pour grits over eggs and stir. Crumble and top with bacon. Season with salt and pepper.
*If you don’t like grits, you could also try oatmeal or cream of wheat. Personally I don’t eat this myself. I just make it for others who love it. I’m more of a Sugar-On-Grits Girl! But I think that oatmeal or cream of wheat would be very comparable with this.

Buffalo Chicken & Rice

Buffalo Chicken & Rice

As you know, around here we love all things buffalo!  This week I’m sharing one of my recent inventions: Buffalo Chicken & Rice!  This recipe is based on the Buffalo Potato Casserole I shared a while back.  Both are deliciously good, comfort food  meals with a kick!

Recipe for Buffalo Chicken & Rice:

Ingredients:
12-15 Skinless Boneless Chicken Strips, not cooked
1/4 – 1/2 cup buffalo sauce (I use Frank’s)
1 1/2 cups rice, cooked (I use the white, long grain)
1 cup of ranch dressing
1 1/2 cup shredded cheddar cheese
1 can cream of celery soup
Directions: Cook rice on stove top according to package directions.  Heat oven to 375. Spray 13×9 inch baking dish with cooking spray. In a large bowl stir  dressing, soup, 1/2 cup cheese, cooked rice, and 1/4 cup of buffalo sauce. Pour mixture into baking dish.
In same bowl, place chicken strips and 1/4 cup of buffalo sauce (use more if needed).  Coat each strip with sauce.  Then spoon chicken and sauce over the rice mixture.
Cover with foil and bake for 30 minutes. Take out and remove foil. Top with 1 cup of cheese. Bake uncovered for another 30 minutes or until chicken is done.

*Optional – Serve additional ranch on the side or atop rice.

Bertolli Meal Soup: A Special (And Easy!) Weeknight Meal

Photobucket

This week my husband and I had a very special (and super quick and easy to make) weeknight meal from Bertolli. Bertolli Frozen Meal Soups are hearty and fresh-tasting soups made with vegetables, meats, pasta and herbs individually flash frozen at the peak of freshness.
They are available in four varieties: Chicken Minestrone, Roasted Chicken & Rotini Pasta, Tomato Florentine & Tortellini with Chicken, and Tuscan-Style Beef with Vegetables.

Photobucket
We decided to try the Roasted Chicken & Rotini Pasta. This soup features roasted white meat chicken, pasta, zucchini, yellow squash, carrots and celery in a savory chicken broth.

I was very amazed by the taste and quality of the soup.  As soon as I opened the package and poured the contents into the pot, I could smell the ingredients (even though the soup was frozen).  It was also amazingly fast and convenient.  Just add one cup of water, and then boil and simmer for five minutes.  That’s right! Just 5 minutes!

And once cooked, the soup smelled and tasted just as fresh as something you would make from scratch or get at a restaurant.  In fact, my husband liked it so much, he inquired about taking it for his lunch!

I served it up with a simple grilled ham and cheese sandwich and crackers.  On a cool winter’s day, it made for a deliciously comforting meal!

6 More Tips to Help Make Your Week Night Meals Special:

1. Table Decor – Set the mood with candles, place cards, or just a simple table cloth.

2. Talk & Share – Go around the table and have everyone share something that happened to them that day.

3. Conversation Jar – On slips of paper, write different conversation topics. Then place the slips of paper in a jar and and draw them out of the jar at meal time for fun and meaningful conversations at the table.

4. Restaurant Quality Meals at Home – With convenient entrees like Bertolli Meal Soups, serve a basic salad and a sandwich or bread. Place on the table at the same time or serve in courses.

5. The “Good Kid” Plate – When one of your kids has been exceptionally good or accomplished something great in school, sports, or the like, bring out the “good kid” plate.  This could simply be a plate that’s different from everyone else’s at the table.  Or perhaps it might include a special surprise.  You could also serve that child’s favorite meal that evening.

6. Don’t forget the dessert!

Favorite Foods of 2011

Looking back over 2011, we had many noteworthy (perhaps even pin-worthy) food posts. Oddly enough, one of my most viewed recipes was my alfredo. It was actually posted in 2010, but since it’s obviously popular, so today I’m featuring it, as I take a look back at some of my favorite food posts from last year!
Hope you enjoy my picks!  Happy New Year! And I hope you’ll join me as we discover more delicious recipes in 2012!

Buffalo Chicken & Potato Casserole

This week I’ve got a super yummy recipe to share! I call it “comfort food with a kick.” This Buffalo Chicken Potato Casserole is perfect for an at-home, family meal. And it would also be great for football parties and potlucks.
I first made this  several months ago, and we LOVED it! I finally got around to making it again a couple of weeks ago, and I definitely want it to be a more “regularly scheduled” meal in our house. Hope you enjoy!

Recipe Buffalo Chicken & Potato Casserole:

Ingredients:
12-15 Skinless Boneless Chicken Strips, not cooked
1/4 – 1/2 cup buffalo sauce (I use Frank’s)
1 – 24 oz bag shredded potatoes, thawed
1 cup of ranch dressing
1 1/2 cup shredded cheddar cheese
1 can cream of celery soup

Directions: Heat oven to 375. Spray 13×9 inch baking dish with cooking spray. In a large bowl stir together potatoes, dressing, soup, 1/2 cup cheese, and 1/4 cup of buffalo sauce. Pour mixture into baking dish.
In same bowl, place chicken strips and 1/4 cup of buffalo sauce (use more if needed).  Coat each strip with sauce.  Then spoon chicken and sauce over the potato mixture.
Cover with foil and bake for 30 minutes. Take out and remove foil. Top with 1 cup of cheese. Bake uncovered for another 30 minutes or until potatoes are tender and chicken is done.
*Optional – When serving, drizzle your potatoes with additional buffalo sauce or ranch. Or serve ranch dipping sauce along side the tenders.

I was very excited to learn about this new product.  I’m always looking for fast breakfast options, and I love that these goes from the freezer to your table in a couple of minutes (way less time than it would take for me to bake biscuits in the oven, scramble the eggs, and cook the meat).
I chose to try the biscuit sandwiches because I love biscuits, and I love breakfast items that are easily portable.  My husband doesn’t really have time to eat a big breakfast before work, so he often carries a piece of fruit or a snack bar in the mornings. But with these new sandwiches, I can easily make a quick breakfast while he’s in the shower and wrap it up for him to take with him.
I purchased each of the varieties of breakfast sandwiches.  I was very pleased by the taste of these, and I was very surprised by how fresh they tasted.  Our favorite was the Bacon & Cheese Sandwich, but they were all rather good. I would definitely recommend this product to anyone looking for a hot and fast breakfast option.

Win it! One Simply Sweet Home Reader will win a Pillsbury Prize Pack, which includes: 3 Full Value Coupons for Pillsbury Grands! Biscuit and Egg Scrambles, a Pillsbury key chain, and a Pillsbury Beanie Doll.

Chicken Bacon & Swiss Sandwich

This week I’ve got a lunch time or quick dinner time meal for you.  This Chicken Bacon & Swiss sandwich is inspired by the one they serve at Arby’s.  I made mine using chicken patties from the freezer section, which cook up in seconds, but if you’ve got a little more time, this would be delicious on a made from scratch patty, or an unbreaded chicken breast.  Hope you enjoy!

Recipe for Chicken Bacon & Swiss Sandwich

Ingredients:
4 chicken breast patties, (frozen or homemade)
4 slices of Swiss Cheese
4-8 slices of bacon
Several tbsp honey mustard, dijon mustard, or mayo/mustard
4 buns

Directions:  Cook bacon and set aside. Cook chicken per recipe or package instructions. Place a slice of cheese on each piece of chicken.  Place in microwave or a few seconds or oven/toaster oven for a few minutes. Top chicken with bacon.  Add honey mustard or your choice of condiments to sandwich.  Serve and enjoy.

Chicken Burritos

It’s been a while since I shared a Mexican style recipe, so here we go!  These chicken burritos are pretty quick and easy to make and very flavorful.  The rice was a little more “saucy” than I usually like, so next time I’m planning to try another recipe that I just found, but I think a lot of people will really like this one, and I hope you do as well.

Recipe for Chicken Burritos:

Ingredients:
For Chicken:
1 1/2 lb chicken breast (boneless, skinless)
1 tablespoon vegetable oil
2 teaspoons Chili Powder
1 teaspoon Lawry’s Seasonsing Salt
For Rice Mixture:
1 teaspoon chili powder
1 1/2 cups Minute rice
1 1/3 cups water
1 can condensed tomato soup
For Burritos:
Flour Tortillas
Sour Cream
Cheddar Cheese
Taco Sauce or Salsa
Lettuce, Tomato, etc.
Directions:  Chop chicken into bite sized pieces.  Place oil in skillet. Heat on medium high.  Add chicken, 1 teaspoon and cook for about ten minutes or until browned.  Pour off fat.  Then add Lawry’s and chili powder. (Use different amounts or even different spices if you desire.)
In a separate skillet, add soup, water, and chili powder.  Heat to boil.  Stir in rice.  Cover and cook on low till rice is down. (about 5 minutes). If you’re not using Minute Rice, follow cooking times on package.
Follow instructions on tortilla package for heating. I just heat mine for a few seconds in the microwave.  Then put your rice, chicken, and toppings together into a delicious meal and enjoy!

What’s your favorite Mexican meal?  Burritos? Tacos? Enchiladas? Something else?

The burger got a makeover, and pork lovers are celebrating!  I’m referring to new Johnsonville Bratwurst Patties and Johnsonville Italian Sausage Patties.  I love the summer grilling season, so I was really happy when I got the chance to try one of these great products.

I made the Italian Sausage Patties over the weekend.  I’ve always associated sausage patties with breakfast, but these made a really great dinner!  Since it’s super hot outside, we kind of cheated and cooked them on the stove top, but they were just as delicious!
I was very pleased with the ease of preparation (from freezer to plate in 20 minutes) and the size of the patties (1/3 lb each).  And my husband and I loved the spicy flavor!

Build your best burger using Johnsonville Brat or Italian Sausage Patties, and you could win a year’s worth of groceries from WalMart in the “No Ordinary Burger Recipe Contest,” sponsored by the National Pork Board and Johnsonville Sausage.

Thrive Chicken Salad (Review & Tutorial)

Don’t you just love chicken salad?  Today for part of our Shelf Reliance party, I’m going to be reviewing their chicken salad.  And I’m going to tell you how easy it is to make it once you have the products!

I always love to try new products, especially “new versions” of foods that I love.  As you may know, we eat a lot chicken, so I was excited to try the Thrive Chicken.  I recieved a sample of chicken, as well as a sample of onions and celery to make chicken salad.
I’ve never prepared freeze dried foods before, so apart from being curious about the taste, I was curious about the process.  Lucky for me, it was very easy to make with just a few simple steps!
Here’s how you do it:
1. Combine chicken, celery, and onion in about 3 cups water in a sauce pan over high heat.
2. Bring to a boil and reduce heat to low and simmer until reconstituted (about 10 minutes).
3. Put the mixture into a colander and let the water drain for about 10 minutes. Make sure to get all excess water out.
4. Set aside in the refrigerator until cool.
5. Combine the cooled chicken mixture with 1/2 cup mayonnaise. Season the chicken mixture with salt and pepper to taste. Spoon onto bread or crackers.

Now how did we like it?  I can honestly say that we LOVED it!    Even as the salad cooked on the stove top, I could smell the onion cooking through.  Upon taking the mixture off the stove, I couldn’t help but taste a small bite of chicken and was intrigued at how the chicken had absorbed the flavor of the onions.
And the final product was delcious! My husband (the sometimes skeptic) was very impressed by the taste and just how flavorful it was, and particularly fascinated by the inclusion of the onions and celery in the package.
And we also loved the amount in the sample, which yielded seven sandwiches for us.  Overall we were very impressed by the product, and I’m very excited to try some of the other meats at Shelf Reliance.
