Spaghetti Bolognese and Other Low Fat Recipes at Quorn

If you like to watch your weight or just eat healthier but don’t like to compromise on the taste and quality of your meals, you should check out Quorn. They have a whole host of hearty meals for you to prepare for you and your family.  Their collection of recipes includes a great variety, everything from pastas, kebabs, casseroles, burgers, soups, stir fry, and even pizza!

I get in the habit of trying the same recipes over and over.  I find a few things that I like, and I stick with them!  Or I will often use a recipe I have and just change an ingredient or two and call it something different.

But this week I made a meal with Success Rice that was a little different.  You could call it man food! (In fact, you could definitely call it man food because the man of the house actually helped me come up with this one!) I’m calling it Cheesy Sausage & Rice! And it’s very hearty, and definitely not bland! Here is the recipe!

Cheesy Sausage and Rice Recipe

Cheesy Sausage and Rice

Ingredients:

Success White Rice (1 bag)

1 package Smoked or Polish Sausage (about a pound)

3 Cups Colby Jack Cheese (of other cheeses would work as well)

1 Can Red Beans, drained

cooking spray or a little butter/margarine.

Directions:  Prepare rice according to directions.  Meanwhile take your can of red beans and drain. Set aside.

Chop sausage in to small pieces.  And drain Get a large pot or sauce pan.  (I used a 5 quart pot, but a 3 quart would probably work just as well.)  Spray the bottom with cooking spray or had a little margarine  (maybe 1/2 tablespoon). Place on medium heat.  If using cooking spray, add sausage immediately; otherwise wait for margarine to melt and then add sausage.  Heat through, stirring often to prevent scorching.

Remove from stove and immediately add cheese.  Stir until cheese is melted.  Then add red beans. Stir until all three ingredients are well combined.  Season as desired  and serve over rice.

Tip:  You can also use other beans like black beans or pintos.  And you can try adding things to the mix like peppers.

Chicken Stuffing & Vegetable Rice

Besides the fact that casseroles are fast and easy to make, here are a few more reasons I love them!

1.  They are so versatile and really allow for you to get creative!  Just add an extra ingredient, or substitute an ingredient or two, and you’ve got a completely different recipe.

2.  They easily allow for you make a meal that has servings of vegetables, meat, dairy, and a starch.

3.  You can cook them for any size gathering.  If it’s just you and your spouse, you can cut a recipe in half or have left overs for the week.  And if you have a large family or a party to cook for, you can double your recipes.

4.  Casseroles are also great leftover meals and most can easily be stored in the freezer for you to enjoy later.

To show you how easy it is to get creative in the kitchen with casseroles, today I’m sharing a recipe that I just invented for this assignment.  I used my favorite casserole  recipe, which is Chicken Poulet, and I just added a couple of ingredients to it, namely a package of chicken flavored rice and a can of mixed vegetables.  And I used these in place of the bottom layer of my Poulet Recipe (which is usually stuffing mix).  And I also threw in some Cream of Chicken Soup, instead of the usual Cream of Mushroom that goes in my Poulet.  The result was an absolutely fabulous tasting meal, if I do say so myself!

Chicken Stuffing & Vegetable Rice Casserole

Recipe for Chicken Stuffing & Vegetable Rice Casserole

Ingredients:
1 5.6 oz package flavored rice (I used Knorr, in the chicken flavor)
2 cups water
1/2 cup and 1 tablespoon Country Crock
1 can mixed vegetables
3 cans chicken, drained
6-8 spoonfuls mayonnaise
1 box stuffing mixed
1 cup chicken broth
2 cans cream of chicken soup
1-2 cups cheddar cheese

Directions: Using 2 cups of water and 1 tablespoon of Country Crock, make the rice according to directions on the box.
While the rice is cooking, open three 10.5 oz cans of white meat chicken. Drain the broth off the chicken and in to a measuring cup.  Set broth aside.
Pour chicken into a small bowl.  Spoon mayonnaise into chicken and mix with a fork, mashing chucks of chicken into shreds.  The consistency should be like that of a chicken salad.  Set aside.
Once your rice is done, drain the water off your can of mixed vegetables and add vegetables to rice mixture. (You may also use frozen or fresh veggies if you prefer.)  Pour rice & vegetable mixture in to 11×13 casserole dish.  Spread chicken mixture over rice.
Open package of stuffing mix.  Add one cup of chicken broth and a 1/2 cup (or one stick) of Country Crock.  Stir till all bread crumbs are moist.  Pour into casserole dish, over the chicken layer.
Next open two cans of cream of chicken soup, and spread over stuffing layer.  Finally cover with shredded cheddar cheese.
Bake at 350 degrees for 25 minutes.  Serve and enjoy!

*Great for a make ahead meal and leftovers set up great in your fridge!*

It’s difficult to find meals that are fast, convenient, delicious, and healthy, especially when you are trying to feed kids. Greenie Tots is a line of microwaveable meals that satisfies all these requirements.  Their meals can be prepared in 5 minutes are less.  Each is 100% meatless and contains no artificial colors or flavors and no high fructose corn syrup.

I got two try a couple of Greenie Tots entrees.  I selected Cauliflower Rice with Chik’n and the Mac and Cheese with Peas. Both were delicious!

The  Cauliflower Rice with Chik’n.  It contains a soy-free meatless chick’n that, in my opinion, tasted just as good as the real thing.  And it had a great mixture of long grain white rice and vegetables.  If you are a fan of stir-fry, I think you would love love this.  I didn’t even season mine, because the flavor was so good I didn’t see a need.  And it was also a good portion size for me.

Mac and Cheese with Peas

As for the Mac and Cheese with Peas, I liked it as well.  The Mac and Cheese was especially good! It is made with a blend of five organic cheeses and milk, and it tasted just as good as other mac & cheese products I’ve bought in the past.  As for the peas, I did season those a bit, to give them a little bit of flavor, I thought they were a great compliment to the Mac & Cheese, and I think kids will love this meal.

I think the other selections looks great as well. For instance, I’d love to try the quesadillas!
