Being from the south, I love eating produce Fresh From Florida. The spring time is a perfect time for dishes made with fresh fruit. Fruit is so versatile! It can be used in everything from salads and appetizers to dessert! Spring is an especially great time for berries, especially blueberries!
Blueberry Muffins are always a delicious breakfast treat, and blueberries are also great to place on top of cake, layer in to parfaits, and put in cobblers!
Personally I love a good cheesecake any day of the week and it can only be made better with a little blueberry on top! Today I have a recipe to share for a delicious Blueberry Cheesecake. Check it out!

Ingredients:
1 whole cheesecake (homemade or store bought)
4 pints Florida blueberries, rinsed
½ lemon, juiced
1 cup water
1 cup natural Florida sugar
Fresh mint sprigs for garnish
Directions: In a small sauce pot, combine 2 pints blueberries, sugar, lemon juice and water. Place sauce pot over medium high heat. Stir contents of pot as it comes to a boil, reduce heat to simmer. Cook blueberry mixture for 20 minutes or until it coats the back of a spoon. Strain blueberry sauce through a sieve if desired.
Let blueberry sauce cool to room temperature, and store in the refrigerator until needed. Top the cheesecake with some of the cooled blueberry sauce, leaving extra for garnish. Place fresh leftover blueberries on top of the cheesecake and garnish with fresh mint. Serve the blueberry topped cheesecake with extra blueberry sauce. (Serves 6 to 12 people.)

It’s been rather cold around here the last few weeks and in much of the country, but luckily we can still get produce Fresh From Florida.
In Florida, February is actually strawberry season. They even have their Florida Strawberry Festival in February and early March! The great thing about strawberries, is they not only taste great but they are great for you! They are a very wholesome food, rich in vitamins, which you can add to your diet and maintain a healthy lifestyle.
Strawberries are also a very versatile food. They are a perfect addition to your breakfast, whether eaten alone, on top of cereal, mixed with granola or yogurt, or as an ingredent for muffins. They are also a great topping for a number of salads, and of course, the possibilties for strawberry desserts are endless!
Today I’ve got a wonderful recipe for you! It’s a Florida Strawberry Parfait and it comes to us from our friends at Fresh From Florida.

Recipe for Florida Strawberry Parfaits
Ingredients:
2 cups fresh Florida strawberries, rinsed, hulled and sliced
8 ounces low fat cream cheese, whipped
2 tablespoons natural Florida sugar
1/2 cup low fat vanilla yogurt
4 graham crackers, crushed
1 lemon, juiced
4 sprigs fresh mint for garnish
Directions: In a medium sized bowl, combine whipped cream cheese, sugar and lemon juice. Fold the yogurt into the cream cheese mixture. In four wide mouth glasses, evenly layer cream cheese mixture, strawberries and crushed graham crackers. Garnish with sprigs of fresh mint. Serve chilled.
