After School Snacking with Bagel Bites and Delimex

School is starting here this week, and with the start of a new school year, after school snacks are a MUST! This year our son will be a “big 9th grader.”  With a course load of pre-ap classes, as well as marching band and other school activities, it is sure to be a fun and exciting, yet challenging year!  This fall will be especially hectic, as he will have band practice 3 days a week, plus his Friday football game activities participation.  (And let’s not forget homework!)

Needless to say, we will need a lot of after school snacks, as well as quick late evening meal time options!  For this reason, I will have a lot of convenience foods like Bagel Bites and Delimex on hand.

I grew up eating Bagel Bites.  They often served as not only an afternoon snack but also a late night, weekend snack.  As someone who grew up being quite the picky eater and who now lives with a kid who is even more of a picky eater, being able to serve up something easy like Bagel Bites is a real plus.  Not only are they delicious, but you can cook them up in a hurry, and since they are microwaveable, kids can make them for themselves.  Bagel Bites are also made with real cheese and homemade sauce with 0g trans fat, so mom’s should have no problem serving them to kids.

I’m also excited to be adding Delimex to this fall’s shopping list.  Although our son goes through his share of frozen burritos, we only recently tried Delimex Beef Taquitos for the first time.  They were an instant hit with him, and I enjoyed them to, so I’m happy to have these as a new snacking option!

No matter how many after school snacks you have on hand, it is always good to try new things and put new spins on some of your favorites so that those favorite foods don’t get old and boring.  So today I’m sharing recipes that you can make using Bagel Bites and Delimex.

First up, we have the Bagel Bites!  Other than pizza, what else do kids love?  Macaroni & Cheese, of course!  Put these 2 ingredients together, and you have Bagel Bites Mac & Cheese!

Bagel Bites Mac & Cheese

Recipe for Bagel Bites Mac & Cheese


1 cup to 1 1/2 cups of mac & cheese

2 Bagel Bites (cut in to fours)

Directions:  Heat up a little macaroni & cheese.  You could use a frozen mac & cheese, convenient single serve packets, or use your homemade leftovers from the night before. Next heat up a couple of Bagel Bites in the microwave.  (A box of 9 cooks up in the microwave in 2 minutes and 20 seconds, so just adjust the time accordingly if you are only making a few.  After cooking, take a knife and cut your bagel bites in to fours, or even smaller pieces if you prefer.  Then mix in with your mac & cheese and serve!  (Hint:  You can try this same recipe with the Delimex and make a delicious Taquito Mac & Cheese!)

As for the Delimex,  I originally planned on sharing a picture of Taquito Mac & Cheese, but then I decided it would be better to share with you how we “doctor the taquitos up.”  I like to call them Taquito Supreme!

3 Delimex Taquitos

1-2 tablespoons sour cream

taco sauce or salsa

shredded cheddar cheese

Directions:  Wrap 3 taquitos in a paper towel and microwave for 1 minute and 15 seconds.  Place on a plate and top with cheese and sauce or salsa.   Top with sour cream or place sour cream off to the side for dipping. Serve and enjoy.
