

Recipe for Cheesy Potato Crisps
Ingredients:
1/2 cup finely crushed potato chips
1/2 cup finely shredded cheddar cheese
4 tablespoons all-purpose flour
2 tablespoon butter, softened
1/2 teaspoon honey mustard
Pinch cayenne pepper
Directions: In a small bowl, combine all ingredients. Shape into 3/4-in. balls. Place on an ungreased baking sheet and flatten slightly. Bake at 350° for 8-10 minutes or until golden brown. Remove to a wire rack. .

I'm pinning these too! We always have tons of potatoes because I buy them at Costco. I've also been dabbling with making more freezer meals, and I wonder if this would work great because potatoes tend to dry out after they have been in the freezer… which would make these even crispier! I'll let you know if I try it.
