Directions: Preheat the oven to 180C (350F), Gas Mark 4. Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugars and beat until the mixture is light and fluffy. Add the egg, water and vanilla extract while still beating. Reduce the speed and gently mix in the oats, flour, salt and raisins to form a dough. Using your hands, roll the dough into walnut sized balls and place slightly apart on two baking trays. Bake in the oven for 12-25 minutes or until light golden brown but still slightly soft in the centre. Allow to cool on the trays for a minute before transferring to a wire rack to cool.

Lissa – Actually we used to live only about 30 minutes or so from the Florida border…now we’re about 30 minutes away from the Tennessee border. Stop by any time!
Sherry – This was my first time to try the oatmeal and chocolate chip combo. And they were quite scrumptious!
Nina – The picture was taken about 2 1/2 years ago. Your comment made me laugh! I finally posted a pic up, because every time I’d sign in to follow someone, I’d get that generic man shadow picture thingy, and I hated it!
It’s funny that you thought I was was nearly 60….I always feel that in my writing it’s obvious that I’m young. (At the very least, I thought that the fact that we have no kids yet and I’m only a few years out of college, would lead people to think I was young.)
