I’m putting this week’s menu together at the last minute. I quickly looked through my recipe binder and picked out some things that I could make with stuff I already have. So today when I went to the store, I only had to pick up few items. It was great to get to go to the store and only spend $36! Yay! The other good news this week is that my husband has now requested Baked Chicken Salad for every lunch. This is going to be a part of his new weight-loss effort. He told me today that he gets excited when he sees all the stuff that I make for him, and the only solution will be for him to have a salad every day for lunch. So being the supportive wife that I am, I am complying with this request. (Besides that, salad is one of the easiest things you can make!) My dinners won’t change much, except that I’m supposed to limit the portion sizes. Wish me luck!

The Creme Brulee is delicious. My husband loves it, and he's a very picky eater. So I always make it for our anniversary & Valentine's day now. His brother gave me a torch for Christmas a couple years ago.
Where can I find a recipe for Baked Chicken Salad? Sounds intriguing… We’re doing Chicken Tacos this week, I’d be interested to know what your foil-packs method is. Glad you like Kitchen Comforts, I don’t have a lot there because I tend to be a dump cook and have limited recipes with definite amounts… oh… and the lemon cups… yum!

Shilah – Maybe I should have said sweet peas…the little round green ones. We’ve just always called them English Peas in my family. I think it’s a southern thing!
I do hear a lot of bloggers talk about creme brulee. I’m definitely curious!
Barbara – A lot of my recipes aren’t measured out either. In fact, I’m trying to pay closer attention when I make certain things so that I can post the recipes accurately.
The baked chicken salad is just like it sounds, baked chicken on a a salad. I knew somebody would ask about that! I probably should have called it Grilled Chicken Salad, but since it’s not grilled, so…
Chicken tacos sound good; I’ve never made those myself. I just found the recipe for the foil packs, and I’m gonna post it in the future. It’s basically a chicken breast, seasoned with taco seasoning or chili powder, and a little salsa and cheese, and then you wrap it in foil and bake it for about 30 minutes at 400 degrees.
Yum. Sounds like dinner will be good at your house. Your taco chicken foil packs sound interesting and easy. May have to try that.

Great menu, I love being able to cook with things I already have on hand.
One way that I’ve learned to control our portions at dinner is to put smaller plates out instead of the big dinner plates. That way you can’t put as much on the plate, but it still looks full. It kind of tricks you into thinking you’re eating more than you actually are. Your menu sounds great. Where are you going for Valentine’s Day?
