For the past few weeks we’ve been getting ready for back to school.  Band camp is behind us, school fees have been paid, the class schedule is in hand, and on Wednesday of this week, Noah will be going for his first official day as a high school sophomore.  Incidentally, a lot of people don’t know it, but sophomore literally means “wise fool.”  (Just a little fun fact for you!)

Friday Favorites – Week 263 – With Pancakes

It’s Thursday night….which means it’s time for another edition for Friday Favorites.  So sorry I missed out with the features last week.  I had a family medical emergency.  Long story short, my husband was in the hospital for a week, so I spent my entire week at the hospital, and I only came home to shower, eat, and feed the fur babies.  I tried to do a little bit of work remotely on my phone and tablet, but that was next to impossible.  Anyway, I’ve had a few days to get settled back in and I hope I can get the blog fully back in to swing next week.  And I’m excitedly ready for a party, complete with features, so here we go!  This week we have tasty takes on a classic favorite breakfast food….Pancakes!

Pumpkin Spice Muffins

Hi! I’m Christine, and I blog over at If I Had Anything to Say . I’m a mom of six who enjoys cooking, reading, writing, shopping, home improvement projects and chocolate—not necessarily in that order. I like to say that I blog my life, so over in my little corner of the web you’ll find recipes, great reads, family topics and other fun. One of my kids has been living with Type 1 Diabetes for almost 13 years, so sometimes I blog about real life with diabetes too.

Today I’m sharing with you a recipe of my own. The holidays are great for sweets and treats, so sometimes it’s great to enjoy something a little healthier that doesn’t skimp on holiday appeal or taste. We enjoy these muffins for breakfast, and they’d be a great breakfast for your Thanksgiving morning!

5-grain Pumpkin Spice Muffins

Five-grain Pumpkin Spice Muffins

(Makes 12 muffins)

1 cup Bob’s Red Mill 5 Grain Cereal Mix

1 cup flour

3 T. brown sugar

½ t. Baking powder

1 t. baking soda

¼ t. salt

1 ½ t. cinnamon

½ t. nutmeg

½ t. ginger

¼ t. cloves

1 cup canned pumpkin

1 large egg

½ c. buttermilk

Preheat oven to 400 degrees F. Line a regular muffin tin with paper liners, or spray with cooking spray. In a large mixing bowl, combine the dry ingredients and whisk to combine; set aside. In a

small bowl, whisk together the pumpkin, egg and buttermilk. Pour pumpkin mixture all at once into dry ingredients; stir until flour is completely incorporated, but do not over-mix.

Spoon batter into prepared muffin tin, filling cups ¾ full. Bake muffins 18-20 minutes or until the tops spring back when touched lightly with a finger. Cool muffins on a rack for 5 minutes; remove from tin and cool completely.

 There’s nothing like hot waffles for breakfast… that soft, chewy confection with the crispy, crunchy edges drenched in butter and syrup, has always been a classic favorite of mine.  And Aunt Jemima makes it so easy a kid can do it.

This weekend Noah was making home made waffle in kitchen with just the push of a button.  Now that’s convenient!

These days, however, the waffle has branched out.  If you stroll the internet, you’ll find waffles topped with fruit, cream cheese, peanut butter, and even chocolate!  Waffles also make a great bread substitute for your bacon, egg, & cheese sandwich, breakfast casserole recipes, and more!  Recently I bought some Aunt Jemima Homestyle Waffles, and they inspired me to think outside the box (literally)  and recipe especially for this fall season.
