The summer will soon be drawing to a close, but it’s not too late to get in to some summer recipes for those of end of  summer and Labor Day barbecues.  Recently I received a sample of Carapelli Olive Oil, and they also sent me some great recipes for the summer time, which I’m happy to share with you today.

15 Muffin Recipes

In my neck of the woods, school is starting back next week. (Where did the summer go, right?) So when it comes time for the back to school season, I always like to post about breakfast ideas, because you know, it’s a new school year, and everyone is energized and wants to start out the year on a good note, with hot, yummy breakfasts, before sliding back into good ol’ quick & easy cereal. (hehe)

Banana Pudding Milkshake

Today I have an amazingly simple treat for you!  Growing up, I absolutely LOVED banana pudding in the summer time! Last year I tried Chick-Fil-A’s Banana Pudding Milkshake and was absolutely in love, but of course, they only had it for a limited time.  So this spring I found myself basking in the glory of Zaxby’s Banana Pudding Milkshake, which is just as equally delicious!  I now hear that it will be a permanent menu item at Zaxby’s….and indeed, they’ve just now brought back the shake at Chick-Fil-A (again, for a limited time).

But the other day I decided that I wanted to make my own.  I remembered trying some banana pudding ice cream by Blue Belle years ago, so I went to Wal-Mart with high hopes and was very excited to find this ice cream in my freezer. Yay!  Now I can have a banana pudding milkshake any time I want, and I get a lot more shake for my buck!

By the way, I made this shake using my Ninja! That thing is awesome!

I get in the habit of trying the same recipes over and over.  I find a few things that I like, and I stick with them!  Or I will often use a recipe I have and just change an ingredient or two and call it something different.

But this week I made a meal with Success Rice that was a little different.  You could call it man food! (In fact, you could definitely call it man food because the man of the house actually helped me come up with this one!) I’m calling it Cheesy Sausage & Rice! And it’s very hearty, and definitely not bland! Here is the recipe!

Cheesy Sausage and Rice Recipe

Cheesy Sausage and Rice

Ingredients:

Success White Rice (1 bag)

1 package Smoked or Polish Sausage (about a pound)

3 Cups Colby Jack Cheese (of other cheeses would work as well)

1 Can Red Beans, drained

cooking spray or a little butter/margarine.

Directions:  Prepare rice according to directions.  Meanwhile take your can of red beans and drain. Set aside.

Chop sausage in to small pieces.  And drain Get a large pot or sauce pan.  (I used a 5 quart pot, but a 3 quart would probably work just as well.)  Spray the bottom with cooking spray or had a little margarine  (maybe 1/2 tablespoon). Place on medium heat.  If using cooking spray, add sausage immediately; otherwise wait for margarine to melt and then add sausage.  Heat through, stirring often to prevent scorching.

Remove from stove and immediately add cheese.  Stir until cheese is melted.  Then add red beans. Stir until all three ingredients are well combined.  Season as desired  and serve over rice.

Tip:  You can also use other beans like black beans or pintos.  And you can try adding things to the mix like peppers.

Banana Cake Mix Cookies

I love cake mix recipes, and I especially love cake mix cookies! Over the weekend I had a couple of ripe bananas that needed to be eaten, so I decided to look up a recipe for Banana  Cake Mix Cookies!  I used a recipe I found over at Best Ever Cookie Collection, making just a couple of slight changes.  And their recipe was based on one found in Cake Mix Cookies by Camilia V. Salisbury.

My cookies turned out absolutely sweet and delicious, and I’d definitely make them again!  If you love banana, you should give them a try too!  Hope you enjoy!

For a slight change of pace today we have a fabulous breakfast recipe from “The Real Housewives of Miami” star Ana Quincoces.  Growing up in a Cuban household, Ana developed a passoion for cooking at a young age. Today I’m happy to share her twist on French Toast.  This is a Multigrain French Toast with Almonds and a Light Guava Maple Syrup.
