I hope you’re enjoying all the frozen desserts and other summer treats my guests and I have been sharing. Today we have a slight change of pace with a delicious Sweet ‘n Sour Pineapple Salsa from Mary-Kate at Christianity Cove.
This tasty snack uses the concept of sweet and sour as a reminder that people we love have good and bad moments. And while our relationships can hit some sour notes, the overall effect is definitely sweet!
Materials:
One cup fresh pineapple finely chopped
One medium diced red bell pepper
One small Jalapeno pepper finely chopped
l/2 minced green onion
Two tablespoons lime juice
Salt and pepper
Nachos or corn chips
Large bowl and mixing spoon
Pretty platter – paper or plastic
Introduction:
Nobody’s perfect. What are some things a person you love does that are
not perfect? They might get short tempered, forget appointments, don’t
always give enough attention, burn dinner, etc.
The thing to remember is that nobody is perfect. There’s “sour” in this sweet and sour salsa we’re about to make and enjoy. The salsa is a little like our relationships – there’s a little bit of “sour” in them, but overall it’s very sweet!
Instructions:
1. In a large bowl, combine pineapple, onion, bell and jalapeno peppers and
sprinkle with salt and pepper.
2. Mix well. Squeeze lime juice and toss again.
3. Serve with nachos or corn chips.
