Now here’s a perfect recipe for this time of year: Strawberry Pie. My dad got this recipe several years ago from a coworker, and it remains one of his favorite summer time recipes. The only difference is that he uses a baked pie crust out of the freezer section as opposed to the graham cracker crust. He also uses frozen strawberries when strawberries are not in season, and these taste just as good as the fresh ones. If you’re a strawberry lover, you should give this one a whirl!
2 pints fresh strawberries, hulled
2 tablespoons cornstarch
1-1/2 cups cold water
1 package strawberry gelatin
3 tablespoons sugar
1 graham cracker crust (8 inches)
2 cups whipped topping

This is pretty much the way I always make mine, too ~ although I’m with you and generally use a standard pie crust as opposed to a graham crust. It’s so simple and SO-O-O-O tasty!!! I use the same recipe for peach/nectarine pie (using peach gelatin, obviously!)
How do you do this one with frozen berries? Do you wait until they’re thawed and then use the liquid in place of the water that you’d add to the sugar and cornstarch? I’ve often wondered this, but been a little too afraid of ruining it if I experiment.
yes, you would have to thaw out the strawberries….I guess I should have clarified. As for draining them of the juice, to be honest I’m not sure. I’ve only made the pie a couple of times, and I used fresh. I do remember watching my dad make the pie with frozen strawberries, and I can’t remember seeing him draining the liquid off the strawberries…but I can’t say for certain, so that’s something I’ll have to find out about.
