Banana Oatmeal Applesauce Muffins


When you have a one year old, mealtime is an adventure, and it definitely takes a little planning, if you want to give your toddler the most nutritious meals as possible. Breakfast has become fairly easy for me. I generally make everything ahead of time.  In the morning  I just have to throw things on a plate and heat as needed. Thaxton really likes muffins, so we have those quite often. I’ve been making them from scratch in order to pack them full of nutritious ingredients. After baking a batch I then put what we will need for the week in a container in the fridge and I freeze the rest for later. (Currently I have 4 types of muffins in the freezer.)

My favorite muffin is banana, so I just had to make it the first muffin Thaxton would try.  As I searched for a healthy recipe, I wanted something with oatmeal and applesauce. Oatmeal has so many great health benefits, and applesauce definitely helps make a moist muffin; plus you have health benefits there too!  I also added spinach to the recipe; this is an ingredient you can leave out if it is a turn-off for you, but I assure you that it doesn’t take away from the taste, and it definitely adds more nutrients to your muffins!  Hope you’ll try and enjoy these Banana Oatmeal Applesauce Muffins! Apple Carrot Spinach Muffins

Thaxton is now 14 months old! How time flies!  He eats a variety of food, including a lot of vegetables!  Our biggest eating challenge has been getting him to eat chunky foods and different textures.  As a result, he still eats a lot of purees. For his non-pureed foods, I try to give him things that are as healthy as possible.  One thing that he is very good at eating is breads and anything else from the grain group, so I started looking for healthy muffin recipes.

Today I’m sharing a recipe for Apple Carrot Spinach Muffins. Don’t let the spinach throw you!  If you didn’t see the specks of green in the muffin, you’d never know they had spinach in them!  I put spinach in Thaxton’s scrambled eggs, all of our muffins, and smoothies!  It’s a great way to get some extra greens, which is something I struggle with myself!

I did take one shortcut with these muffins.  I used applesauce instead of chopping up fresh apples.  Thaxton enjoys applesauce, so we keep that in the fridge, and I like the idea of using what I have, rather than going out and buying more ingredients.

This week I’ve been busy preparing for our son’s first day of school next week.  We’ve paid his school fees, picked up his schedule, purchased clothes and shoes, and tomorrow I’m picking up the rest of his school supplies.  With all this back to school preparation, I’ve got breakfast ideas on my mind, so this week I’m featuring a few yummy “breakfast delights.”  Not only would these make for some yummy breakfasts for the kids, but they would also make great mid-morning or mid-afternoon snacks for Mom!  Hope you enjoy them!

Christmas Day Muffins from Tanusree at Ma Niche

Hello everyone ! I am Tanusree from the blog  Ma Niche, where I share my culinary adventures and sometimes easy diy projects. I love everything baked and everything Mediterranean and that is pretty evident from my blog.  Being from India where a big percentage of the population is vegetarian I often try to bake my cakes, cookies and breads without eggs, and today I am delighted to be here to share my eggless Christmas Day Muffins with you. I have baked these using whole wheat flour so they are slightly dense. However if you prefer fluffier ones just substitute the whole wheat flour with an equal measure of all-purpose flour and you’ll be good to go.

Christmas Day Muffins

Recipe adapted from Mrs Byatt’s Christmas Day Muffins

Prep time: 25 minutes                                                                                   Cook time: 20-25 minutes

Total time: 45-50 minutes                                                                             Yield: 7

Ingredients

Christmas Muffins

 

For the Muffins

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1-1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp baking soda
  • 40 ml canola oil
  • 60 ml milk
  • 40 ml orange juice
  • 1/4 cup granulated sugar
  • 3 tbsps yogurt
  • 2 tbsps orange marmalade
  • 1 tsp orange zest
  • 1/2 cup dried cranberries

For the Orange Marmalade Glaze

  • 3 tbsps unsalted butter
  • 2 1/2 tbsps orange marmalade
  • 1 tbsp orange juice
  • pinch of salt
  • 1/2 tbsp spiced rum*(optional)
  • 3 tbsps powder sugar

Cooking Directions

    1. Grease 7 muffin cups or 7 outer holes of a muffin tray and keep aside.
    2. Preheat oven to 400 degrees F.
    3. Sift together the flours, baking powder, baking soda and the spices and keep aside.
    4. Put the oil, milk and orange juice in a mixing bowl and beat to mix them well.
    5. Add sugar to the liquid mixture and beat till it is well incorporated.
    6. Add the yogurt, marmalade and orange zest to the sugar-liquid mixture and beat well.
    7. Using a wooden spoon gently fold in the sifted flour mixture and the cranberries into the liquid mixture taking care not to over-beat.
    8. Spoon the batter into the prepared muffin cups/holes and bake in the preheated oven for 20-25 minutes until the muffins have risen and are golden on top.
    9. Remove the muffins from their case and let them cool while you prepare the marmalade glaze.
    10. For the glaze :  Heat butter in a saucepan until melted.  Stir in the orange marmalade and orange juice and mix well.Switching off the heat, stir in the salt, the powdered sugar and the rum and mix well until a smooth uniform solution is formed.

Dip the muffins into the prepared marmalade glaze, coat them on all sides and let the glaze settle, about 10-15 minutes. Then serve and enjoy !
