Taco Soup

In recently weeks, I’ve been enjoying a lot of comfort food with my family, including a few batches of soup!  I love soup, because it is a great way to get a good mix of protein, veggies, and often carbs in one meal.  Soups are also easy to make, generally speaking.  And soups go a long way!  You can use them to feed a large group, have a leftover meal (or meals), share with a sick friend, neighbor or family member, or you can freeze leftovers for a later time.

A couple of weeks ago I made up a batch of Taco Soup.  If you like chili, it’s pretty much very similar to chili, except that you use taco powder and ranching seasoning mix instead of chili powder.  The recipe I had actually called for a lot more things that what I used.  For example, it had 2 cans of green chilis and an additional can of tomatoes.  Since I didn’t use these ingredients, it made the soup very chunky like a stew, so I decided to add some broth to mix!

I just so happened to have some chicken broth on hand, so that is what I used.  I know the soup contains beef, but I figured chicken broth is good in everything, so why not try it?  Of course, it turned out great.  The soup tasted good, and it had a great consistency.  I think two cups of water would have worked just as well, and beef broth is another potential option that I’d try to you are unsure about using the chicken broth. But I personally recommend it!

Easy Family Meals with Stouffers

Pork Potato Casserole Served

A couple of weeks ago I shared a delicious recipe for Pulled Pork Nachos.  Pulled pork is an absolute Southern staple and one of my favorite foods!  I love ordering it from local barbecue places, and I also love making it at home!

Sloppy Joe Walking Tacos for Manwich Mondays

Monday is usually the busiest day of the week for me. It’s usually when I have the most work to do for my business, and then we have a lot of things happening at school as well. All of this usually means that I have to come up with a SUPER easy and quick meal to cook. One option I often turn to is Manwich and Manwich Monday Recipes.

Manwich sauce comes in three great varieties: Original, Bold, and Thick & Chunky.

As a kid, we ate Manwich Sandwiches all the time with Original Manwich sauce, but nowadays I use the all the varieties. (My favorite is the Bold!)

Manwich Sandwiches are truly a great meal for the family. Apart from being delicious, the Kid-Stopping Power of Manwich makes meals a messy-licious treat to be enjoyed with both hands. And Manwich offers moms and dads an easy, quality ingredient to bring the family’s attention back to mealtime and away from everyday distractions (like video games and text messaging).

And I now use the sauce for so much more than sandwiches. A couple of my favorite meals are Sloppy Joe Pies to Meat Loaf!

A few days ago, I used Manwich to make Sloppy Joe Walking Tacos. Have you heard of Walking Tacos? They are one of the latest food crazes!

Basically you take a bunch of different ingredients and just mix them together in a cup. It offers you a tasting meal that you can eat on the go without the mess!

For the Sloppy Joe Walking Taco, I mixed Manwich sauce with cooked ground beef, just as I normally would for sandwiches. And then I spoon the meat mixture in to a large mug, layering it with Frito Chips and cheese. (You could also use other ingredients of your choosing, such as lettuce, tomatoes, pickles, and other veggies or condiments.)

Not only is it a delicious meal to serve, but it’s also less messy! You could say this recipe and method of serving takes the sloppy out of sloppy joes!

This fun and less-mess, individual serving method also makes this a great food to serve at football parties and other events. Guests will be able to grab their walking taco and eat while standing up or while mingling with other guests!
